Pancakes are a great idea. You could make crepes and fill them with fresh fruit and top them with Greek yogurt. You can make crepes ahead of time, too, to speed up breakfast.

Maybe the two of you would like baked oatmeal?

Again, you can make it ahead of time and eat a slice cold or warmed up in the microwave in the morning.

I just made this, they are spaghetti squash and pear pancakes. I made them into PB and banana sandwiches, but you could do all sorts of things with them (I listed some suggestions in the notes). You don't taste the squash, they mostly taste like pear pancakes, but you could sub in apples too I bet!

I like the breakfast casserole idea...I may do that myself.
Also you can do "breakfast in a mug" Hungry Girl has lots of these recipes.

Try soups, either as light dinner or breakfast. You can use a crock pot, or cook them most of the way the night before and just reheat them while you are getting dressed.

Try putting blueberries in a bowl and microwaving them for 30 seconds or a minute... just long enough until they pop and start to become liquidy... then put a scoop of cottage cheese or yogurt on top. You can add anything else you want to this. Its really good.

How about other hot cereals that are out there? There is cornmeal, red river cereal, cream of wheat cereal... etc...

Or how about making a bread pudding. It is similar to French toast, but it is baked instead of fried... I like my French toast or bread pudding served with a warm compote made from fresh fruit...

If you like your oatmeal, eat oatmeal! Your fiancee is an adult, presumably. He can make his own breakfast.

I don't mean any offense - obviously if it's important to you to cook for him, ignore me. But it sounds like you're doing a lot of tailoring your food choices based on his preferences. Surely he can fend for himself for one meal a day?

I like some of these ideas

The only reason I am thinking more along warm breakfast is because I don't want just cereal every day, or eggs. I'm looking for other options that will get me more fruit/veggie intake as I sometimes struggle to get my 5/day. I still want something that is fairly quick.

I would probably keep dinner as the warm meal, just serving smaller portions. I hate having to think too hard about breakfast!

Make a breakfast casserole on the weekend and heat up a slice each morning.

Make a batch of pancakes on the weekend and heat them up each morning. I do about thirty seconds in the microwave then a quick pop in the toaster. You could make whole-wheat banana pancakes then top them with peanut butter!

Make breakfast burritos in advance, freeze them and reheat each day. I fill mine with scrambled egg, refried beans, cheese, salsa and roasted vegetables. Cool completely before packing and freezing (there are lots of instructions online).

When I want hot cereal, and others don't, I will make my self a bowl of raisin bran and milk, and stick it into the microwave for 1+1/2 minutes on high. I then stir it and let it sit for a couple minutes. It thickens up to a lovely porridge like consistency. I like it better than oatmeal.

Have you tried steel cut oatmeal? Totally a different beast from rolled oats, which I don't like. Steel cut is super easy too. Boil water the night before and oatmeal to soak. In the morning reheat and serve with toppings.

So, my fiance wants to have smaller dinners. I always like to have a warm meal in the day. So now I'm stuck. I don't want to eat eggs everyday and he doesn't like my oatmeal, so what on earth do I make???

Any suggestions???
