On weekdays I have a fruit smoothie. I try to make it green with some spinach and kale, but that varies.
Anyway, being a weekend, I had more time, so I sauteed zucchini, onion, bell pepper (red and green) and mushrooms with some jalapeno, garlic and black beans and had that with my farm fresh eggs over medium and some goat cheese and salsa. Soooo yummy! This is becoming my standard weekend breakfast, and I get about 4 servings of veggies in first thing in the morning.
1 cup Kashi GoLean Crunch Honey Almond Flax Cereal with 1 cup fat free skim milk, and 2 cups coffee.

Banana smoothies are great! I use 6 ounces Almond Milk unsweetened, 2 ounces skim milk for some creaminess and a frozen banana (peeled and frozen the night before). You could add vanilla flavoring or unsweetened cocoa powder too. If you add a scoop of ice too, it really pumps up the volume, and you are full after drinking!!!

Sinces it Sunday we have pancakes with sausage and eggs for the husband and son. I have my regular breakfast of Fiber One/Kashi Cereal mix with fresh fruit and fat free milk.

Easy breakfast I have almost every day:
1 c. fat-free plain yogurt + half a scoop of whey protein powder.
Sometimes throw in some fruit when I have it.

Smoothie! 1 cup vanilla soymilk, .5 cup frozen strawberries, .5 cup fresh mango & a banana. (normally, I use 1 tbs reduced fat peanut butter and no mango)

the Dr. Oz miracle muffin: 1/4 cup flax seed meal 2 tsp ground cinnamon 1 tsp baking powder , aluminum-free 1 pkt stevia 1 tsp coconut oil 1 egg
mix all in a large coffee mug, microwave on high for 50 sec

I have fallen in love with chicken sausage. When we grill on the weekends we throw on a whole pack of chicken sausages. I really love the spicy ones. Then cut them up and keep them in the fridge. Every morning I scramble eggs and throw in some of the cut up sausage-very low fat and high protein!

I am also a bigger breakfast eater....I'm a big eater period but whatever. So my standard breakfasts are....
3 egg white omelet - which is 3 egg whites, spinach, 2 slices of turkey and a low cal cheese (I like swiss in this one) top it with a few slices of tomato. then I have toast with almond butter or fruit or potatoes with this and of course coffee.
2 whole wheat waffles with 2 tbs syrup and fruit sliced up on top of waffle.
thin bagel with 1 or 2 egg whites and some variation of; cheese and salsa, cheese and asparagus, cheese and spinach, deli meat and cheese. Served with fruit or potatoes.
1/2 cup oatmeal with fruit in it. slice of bread with almond butter
2 Thomas's whole wheat mini bagels with 2 wedges of Laughing Cow light creamy swiss cheese spread and a cup of coffee...

I went to work later this morning, so I made a simple frittata - from Moosewood cookbooks. It had fried potatoes and onions, garlic, fresh basil, spinach, mushrooms, tomatoes, and eggs. I love having extra time in the morning!
