Eggplant lasagne instead of pasta layers

I like making pasta with loads of veggies like red peepers, green peppers, some zucchini, a lillte bit of beans after rinsed well in water, some lean ground turkey, whole wheat pasta and a lilltle chicken broth.
If you desire sauce use diced tomatoes in can or fresh tomatoes cut up.

I make my sauce with "Protein Crumbles" rather than meat. It's like ground beef for vegetarians, and it helps get in some protein and I usually only need about 100 calories worth to get that "meaty" sauce!
I like to make my own pasta sauce from organic vegetables and pour it over a cut up zucchini. I cut the zucchini up in long shreds, all pasta-like.

I like making meat sauce with half ground turkey and half finely diced veggies. Peppers, spinach, carrot, zucchini, eggplant, onion, lots of garlic, all that and more, dice it up fine, and brown them with the meat, then dump on a few cans of crushed tomatoes, season it how you like, and you have a seriously healthy and awesome sauce.
So, sometimes I like slumming it with jarred alfredo. Use half of what you normally would, but heat it up with an equal amount of fat free chicken broth, again, season it up (I like lemon, parmesan, black pepper, and nutmeg) then thicken it slightly with a bit of cornstarch dissolved in water. Same body, but since you're using fat free chicken broth and a bit of cornstarch, it's like half the calories. In fact, I like it way better, because it's not as heavy and rich.
Instead of huge bowls of pasta, now, I always make sure I have the same exact amount of pasta and vegetables. So, a serving of spaghetti is one cup, then I'll add a whole cup of broccoli or zucchini, to round out the meal, and have sauce over both. Often, it's so filling, I can't even finish it.

I come from a family where we eat pasta very often, and that's definitely transitioned to my adult life as well; whether I'm out at a restaurant or just cooking at home, I like my pasta! Eating it with just butter or a thick alfredo sauce are pretty much out of the question now..so I've been experimenting with healthy pasta recipes to still give me the satisfaction of it, but loaded with veggies, beans and protein.
