Microwaved eggs with Canadian bacon. The ability to microwave an egg to scramble it has made it easier for me to eat eggs more often.

Chef Meg's corn and poblano tostadas: recipes.sparkpeople.com/recipe-detail.asp?

I use frozen corn instead of fresh charred (although the flavor is better with fresh charred); whatever peppers I have on hand (usually jalapeno or serrano); and beans instead of chicken since I'm vegetarian.

I've made these for guests, and done them on the barbecue, and they're a huge hit.

I like the salsa chicken, made in the crockpot.

I am finding the Spark recipes to be very tasty and easy -- a good combo! I am still fairly new to the site and wondered what recipes were everyone's favorites. We've only tried about five so far, but the phyllo-wrapped asparagus and Mexican crock pot chicken were big hits at my house!
