Check out the zucchini fritters from Smitten Kitchen. I make them all the time with a combo of squash and zucchini. I also crush a few cloves of garlic in them and add a bit of parm or grana cheese. They are a big hit in my family. I love them for breakfast with eggs or as a side at dinner. She also has several other zucchini recipes, but I haven't tried them.
I also like to use it as a component in meatless fajitas (cauliflower, carrots, peppers, onions and zucchini all sauteed with Mexican spices and served with beans, rice and tortillas)
Grated, it is a great filler for meat loaf. My meatloaf is less than 50% meat thanks to zukes, carrots, onions, celery, tomato and oatmeal/breadcrumbs)

I love it stir-fried even just by itself w/ a little oil or spray in a hot pan, or for a party I cut small ones in half, seed them and mix some goat cheese and herbs or add chopped/dry sundried tomatoes and roast them in the oven. Yum. I've also used them instead of noodles for lasagna (use a peeler to cut long thin strips), used the strips to roll up around goat cheese or cooked ricotta mixed w/chiles, onions, salt and pepper. I haven't yet tried a recipe I saw for zucchini spaghetti--julienned or shredded and mixed with a lemon, chive dressing (2 T lemon juices, 1/3 c minced chives, a bit of salt and 1 cup light cream)
Roast it or use it in a stir fry. Do a quiche or casserole. Put it in pasta sauce. You can also use a vegetable peelers to slice it very thin, then saute it and use it like pasta. it's actually pretty good raw with some dip, too.

Great topic ! I haven't done it yet but someone told me to slice it not real thick and spray pan with oil bake till soft then put shredded cheese on it till browned !
The Lord is my strength and i know i can do better with the Lords help. The Lord laid it on my heart to start a team called GOD ANSWERS PRAYER AND I WOULD LOVE TO HAVE ANYBODY THAT WANTS HELP TO LOSE THEIR WEIGHT TO JOIN . I KNOW I CAN'T DO THIS WITHOUT THE LORDS HELP !

I have an over abundance of zucchini and yellow squash from my garden and am looking for new ways to prepare it! I have the usual ways, grilling, sauté with tomatoes, stuffed and muffins/bread but I need some new ideas for preparing it.
