Chili Mac
1 can of kidney beans with liquid
1/2 lb ground beef or ground turkey
1 small onion chopped
1 can of diced tomatoes with liquid
1 stalk of chopped celery if you desire
Tsp. each of Rosemary, cumin, garlic powder or fresh garlic. A sprinkle of pepper.
Brown meat add all the other ingredients and simmer while you cook up 2 ounces of noodles.
Drain noodles and add to mixture, stir and serve.

I like making some homemade meatballs but HMATTAX had a great idea too!

Might be a little late, but I like hamburger stew for cold nights.
1 lb ground meat
1 onion (and some garlic if you like)
1 can diced tomatoes
1 box beef broth
1 tomato can of water
1 bay leaf
.5 to 1 c. macaroni or other pasta
1 bag frozen mixed veggies (I like peas, carrots, and corn)

-----
1. Cook onion and burger till meat is browned, drain
2. Add tomatoes, broth and a can of water to the pot and bring to a boil with bay leaf.
3. Add macaroni and cook dill almost done (time depends on the pasta)
4. Add bag of veggies and return to a boil until pasta is to your liking.

The only thing in the freezer was a pound of ground beef. I was thinking of a speedy strogonoff but would take other suggestions... I don't get home from work until almost 6 so something fast and easy would be appreciated.
