I replace the oil with applesauce all of the time and don't have any issues. Turn down the temp and maybe you should squeeze the liquid out of the zucchini if it's wet in the middle.

Sounds like you're cooking at too high of a tempture. Turn it down and cook them a bit longer. I also find that muffins and breads do better one level up from the middle rack.

the applesauce does help but u can try fat free mayo also turn oven down &cook a little longer emoticon

I have tried 3 times to make zucchini bread as bread and muffins. I dont cook with oil or crisco, but I cannot seem to get the bread to come out the right way. It is still wet in the middle, almost burnt on top and sticking to the cupcake wrappers. I am at a loss, and have a bbq in 2 days that I have to figure this out for!!! HELP!!!
