Here's an easy one:
Layer sliced zucchini with your favorite tomato sauce, some parmesan and mozzarella cheeses, shredded. Sprinkle on a bit of Italian bread crumbs too. Bake at 350 until cheese bubbles, about 20-25 minutes.

I'm not sure you can make zucchini much better than sauteed in a dash of butter, with onions and parm sprinkled on top.
Although, I've taken to soaking them in worceshtershire sauce lately, and sprinkling them with cajun seasoning and then grilling them.
I'm sure you can do all sorts of fancy stuff with it, but man is it ever good just simply grilled.
