For bok choy I usually chop it up and then throw it into a pan with a bit of peanut or seseame oil, some garlic and some onions

Kale I've never had much success with eating, but spinach, oh boy do I love spinach...

Spinach is great because you can add it to roughly a million different things, fry it in a pan the same way as bok choy, put it in soup, sandwiches, all sorts of deliciousness!

Bok choy steamed and tossed in a little sesame oil...YUM!

I love rocket (arugula tossed in olive oil and a little sea salt)

I love fresh spinach and always have some in the house. I add it to sandwiches instead of lettuce, add it to soups, eat as a salad. It's great, lo-cal, high fiber!

I also love all types of string beans, snap beans, ans will eat them raw or cooked lightly. Yum!

i love cooking and trying new things collard greens, frshe spinach kale etc,,,,,,,i would like to try bok choy never had it, so let me hear some ideas,
