i prefer to roast all my fresh veggies even green beans with some pam spray and some sort of seasonblend, usually what ever i season my protein with i season my veggies with. very good.
i also use chicken stock or veggie stock(low sodium ) when boiling or steaming adds flavor.

Some veggies, like asparagus are great with a little fresh lemon juice squuezed on them after cooking. Mrs. Dash southwest shipotle is great if you like spicy. I have also 'melted' a teaspoon of Sabra Supremely Spicy hummus on many vegetables - it's creamy, spicy and tasty

sesame seed oil is great you only need a few drops to get great flavor with a little soy sauce, super good

its best not to use fat substitutes as well as sugar ones. Like to steam veggies & mash them then add onion garlic green chili & cilantro in a little oil & add the mashed veggies then

dont use "i cant believe its not butter" it worse than real butter calorie and fat wise, it only says zero calories because the amount is small that you spray, they dont have to put the calorie content, your better off with olive oil, fat free sour cream, or even low fat mushroom soup, also try other steamed veggies, my favorite right now it cauliflower broccoli and carrots steamed with light Italian 10 cals, and tony's creole seasoning, but in general low cal dressings are great, and even better when you roast the veggies in the oven

I usually season my broccoli or cauliflower with pepper and chopped onions. I steam the onions with either or both of them for 2 minutes.

green beans are a favorite of mine. MW about 7 min then. heat some evoo or alittle butter in pan. add beans, and garlic salt. get the pan sizzling and pay attention to them stirring often. turn burner down to low, cover. come back in 5min. delish

Roasted broccoli and brussel sprouts are my favorite veggies.

Pre heat the oven to 400

In a small bowl or measuring cup add a 1/4 cup of chicken broth or vegetable stock and a tsp of olive oil. Salt, pepper and garlic powder to your taste. Blend well and pour over the veggies. Stirring to coat.

Place broccoli on a baking sheet coated with cooking spray.
For brussel sprouts place in a corning ware or baking dish.

Roast for 20 to 25 minutes.

Then I have to be careful not to burn my mouth because they taste so good I don't want to wait!!!

You could also try the best life buttery spread it comes in a container and a spray bottle. On my green beans, I put ken's salad dressing it's called lite accents raspberry walnut and comes in a spray bottle. 10 sprays is 15 calories.

Generally, I like to toss with olive oil, salt, and black pepper and roast; if i have the energy, i'll toss in some slivered garlic as well. I also like to grate some lemon zest and squeeze some lemon juice over the veggies as soon as they come out of the oven. Tossing in some toasted pinenuts and grated parm is good too.

Some other combos to try:
- this one is magical: Mix together a small can of anchovies (minced), minced garlic, toasted fennel seeds, and crushed red pepper flakes with a few tablespoons of EVOO. Toss with veggies, sprinkle w/salt and roast (a lot of the oil drips to the bottom of the tray while roasting). top with grated parmesan while hot. This combination of flavors works especially well with cauliflower and broccoli. It's also amazing with pasta (just combine veggies with slightly underdone pasta in a skillet w/some pasta water).

- As mentioned already, experiment with spice mixes. Herbs de provence with a mix of summer squash, eggplant, garlic cloves, and seeded tomatoes (instant ratatouille); garam masala; ras-al-hanout; chili powder.

- If you're steaming veggies, you might try playing around with vinaigrettes to drizzle over after steaming. the ones i use most often are asian (soy sauce, rice vinegar, canola oil, sesame oil, honey, grated ginger, and grated garlic) and the classic french (dijon, evoo, red or white wine vinegar, a squeeze of lemon). I like to top the veggies with chopped fresh herbs, scallions, and/or chopped toasted nuts for variety.

- make a balsamic reduction; just take any old cheap balsamic and simmer in a saucepan until it turns syrupy. you can drop a sprig of rosemary, thyme, or mint in there to infuse. this is also yummy sprinkled with cracked black pepper and drizzled over fresh strawberries or kiwi slices (strange, but delicious).

I'm addicted to Trader Joe's sweet chili sauce. It's sweet & spicy, 25 cal/tbsp, and it is DELICIOUS on broccoli! Even my husband who hates broccoli will eat it with this sauce. Can't wait to try it on other veggies - I used to eat it with egg rolls!

Just saw a great idea on 101 cookbooks. My version would be to saute a few garlic & onion slices in hot oil add coconut & toast it keep it aside then after cooking some spinach add it to the mixture, serve hot adding lots of minced green chillies. Salt to taste

Mrs. Dash makes a lot of delicious seasonings that I use a lot. They are sodium-free and are very tasty. I also like balsamic vinegar and sometimes even apple cider vinegar.

We make a curry with everything love cooking fish with veggies also. Fry onions in a little oil, add ginger garlic paste saute a bit then add turmeric, coriander & cumin powders & when smell goes add fish for a bit to saute in gravy remove add veggies bit of water salt if needed Cover When almost done add the fish, green chillies & cilantro.

I love to squeeze lemon over just about any veggie that was steamed. It's amazing on broccoli!

Another idea is grilled veggies. If you're using frozen instead of fresh, make sure you thaw them in the fridge and pat dry before trying to grill them. Use a mesh over the grates to be sure you don't lose them to the fire :)

Another way is to marinate them in fat free dressing before steaming.

With most veggies heat a little oil add cumin seeds chopped onions the veggie salt cover & cook. Am Bangladeshi so that's how we do it. Add green chillies of course

When I grill or roast my veggies I use olive oil and a little pepper. Sometimes when I grill them I put a little italian salad dressing on them and wrap them up in foil. Spray butter also makes veggies very tasty.

I have found that a tasty addition to simple steamed veggies is to add a little bit of salsa to the mix. The salsa is healthy, but the flavor is WONDERFUL!

I crumble up bouillon cubes or use crushed bouillon from the jar. I also add pepper. If sodium is an issue, you can get reduced sodium bouillon cubes.

One trick I use to make vegetables tasty and gives them extra flavor without butter is, I simmer them in a bit of a very flavorful chicken stock. (Watch out for additives & sodium--I use an organic, free-range low-sodium one that tastes really rich. It comes in what looks like a giant juice box.)

Sometimes I add the garlic-herb Mrs. Dash or the onion-herb Mrs. Dash to the cooking liquid. (Mrs. Dash works best when she's cooked.)

When they're done, I sprinkle them with a bit of freshly ground pepper. Sometimes I still need a tiny bit of salt, but still a lot less because of the chicken stock. The chicken stock adds a similar deep richness a lot of people like from butter, without fat or from chemicals, which fake butters have.

I save the cooking liquid to make soup with later in the week.

The other thing I do is roast them of course, but it's way too hot for that in the summer.

roasted asparagus (or grilled)- a little cooking spray, garlic powder pepper and salt.

zucchnini fries- slice zuchnini up in fry shape, coat with egg white and a sprinkling of bread crumbs (very light) and bake for about 10 min on eaach side.

zuchini/squash in a pan- cook with cooking spray, salt pepper and garlic

green beans- in a frying pan with cooking spray and salt pepper and garlic or with some white wine simmered....

I love vegetables all kind!
this is one of the way how I cook it.
On a baking tray put any veggies you like( carrots, onions, cherry tomatoes, bell peppers, eggplants)
add some italian seasoning, cumin and olive oil. Salt is not necessary. Mix seasoning for veggies can do well too. bake at 350-375F till soft don't over cook. Very delicious!

How exactly do you roast veggies? I'm not a big fan of vegetables but was given some roasted cauliflower to try and it was yummy!! I don't know how to roast it though.

Mrs. Dash can be hit or miss for me. I love the original flavour but the other ones I've tried? Ugh. I completely agree with the roasting. I toss chopped up veggies (potatos or sweet potatoes, cherry tomatoes, onions, peppers, carrots, you name it!) in a little bit of olive or canola oil and then sprinkle with whatever herb mixture I grab out of the cupboard. Be careful though, many of these contain a TON of salt. All it needs is just a light sprinkle to give them tons of flavour.

I use no salt butter or margarine for a little bit of flavour. However most people (and restaurants) drench their veggies in butter. Just a 1/2 teaspoon should be enough to coat a cup or two of veggies. Then, sprinkle with cracked black pepper, some herbs, or leave plain.

My current favourite? Steamed cauliflower (1 cup) with a teaspoon of light cheez whiz and a sprinkle of chili pepper flakes. Fairly low in calories and filling.

I do all of the above - except salt (don't like it) - I also like using salad dressings to cook with (like italian or french - low fat, of course) and seasonings like cardamon and cumin are good, too - so is curry powder, paprika (mm mm!)

Also, I love salt and pepper! Sodium will make you retain water, but it doesn't have calories, so it beats butter anyday :)

I just steamed some green beans in the microwave & seasoned them with mrs dash. They were awful! Any suggestions on how to season veggies without using a lot of butter?
