1 pound any shape pasta 1 pound lean ground turkey 1 small onion minced so kids don't see it 1 small green pepper minced so kids don't see it 2 cloves garlic minced 1 tablespoon Italian Seasonings 1 jar your favorite pasta sauce
Boil pasta to box directions in a big pasta pot
Saute the onion, garlic and green pepper in a bit of olive oil for 5 minutes. Add the ground turkey and Italian Seasoning and saute until turkey is done.
Once pasta is done, drain it and return to the pasta pot. Add the turkey mixture and mix well. Add the jar of pasta sauce and heat through.
Enjoy with a salad !
Change up the pasta shapes. Elbows, ziti, spaghetti, wagon wheels, rotini etc etc That way the kids won't be bored with the same old dish every week because they will see different shapes !

I have a pretty steady rotation of the same stuff. Some stuff my 3 year old will eat, others she won't, and it's a battle for a few bites, then a (usually, try to be mostly healthy) snack.
I make turkey burgers, turkey tacos and turkey Italian sausages almost every week. Ground turkey sloop joes with cole slaw were a big hit. I've been trying to do a shrimp stiry fry of sorts every week. I use grated cauliflower as the "rice". Spaghetti squash with sauce and meat is usually a hit, too. And, of course, there's always breakfast for dinner. I usually make a big scramble.

Try turkey meatballs and spaghetti. Use Italian style turkey sausage (sweet or spicy) and remove it from the casing. Add 2 Tablespoons of grated Parmesan cheese, oregano and basil. Mix it with your hands (over mixing will make meat tough) and for it into balls. Cook it in a low-sodium/low sugar spaghetti sauce. It doesn't need any fillers (bread crumbs) or salt. If you're watching your carbs don't eat it with pasta. Give the kids a whole wheat pasta, serve it with a fresh salad (no bread)
