If you have a cooler, Greek yogurt is a great source of protein. Also, don't forget nuts. I hear that quinoa is high in protein. I'm sure there are lots of great salads you could make with it. Chia seeds too.
Again, if you have a cooler, you could do many things with chicken. Make several breasts up ahead of time. I like to take four breasts and put them in the slow cooker with a jar of salsa. Cook for four hours, then shred. Use on salad, in wraps, etc.
If you don't have a cooler, freeze the chicken and pack it frozen with a yogurt and cold or frozen beverage nice and tight and wrap it in two bags. You can even put a blanket on top to keep it cold.
They get dull so shake 'em up. Hard-boiled, pickled (it's a southern thing I think), or deviled. When deviled eggs get old, change the recipie. Chipotle mayo, wasabi mayo, salsa, tuna salad, whatever.
I was in Ethiopia recently and had the most AMAZING salad with hard boiled eggs, slightly-roasted green beans and asparagus, roasted beets, raw lettuce, tomato jalepeno, and then the "dressing" was just a can of tuna with a small amount of the oil and lemon juice. I know it sounds heinous, but it was delish, I must have eaten 3 helpings!

I also like having just basic protein munchies: light string cheese/mini babybel lights, hard boiled eggs, beef jerky (watch your serving size here and salt). Add in some fresh cut and ready-to-eat veggie/fruit sticks and you are set to go! --Heather

using tortillas as wraps: lettuce, cream cheese, tomatoes & cucumbers & mayo. pesto sauce spread on the tortilla, tomatoe, lettuce, chicken, sliced peppers.

Do lettuce wraps with mayo, onion, tomato and lunch meat. add low fat cheese if you like it!
