I made this last night and it was very good!
1lb chicken breast(thin sliced,bonless,skinless filets)
flour-just enough to dredge the filets
1 egg white
1/2 cup finly chopped pecans
1tbs olive oil
1/2 cup FF chicken broth
1/2 cup orange juice(you may need to use more OJ if the sauce gets to thick)
and a few mandarin orange slices
2 tbs or so of corn starch
Dredge the chicken in the flour, dip in egg white and then coat with the pecans
salt and pepper the filets and brown in the oil about 3min each side.
Spray the filets w/ cooking spray and place in a baking dish and bake at 400 for about 15min.
While they are in the oven .
add chicken broth to the fry pan scraping the pan.
Mix the orange juice with the corn starch to make a paste and then add to the fry pan---stirring till thickens. Add more OJ till the sauce is the consistancy you want then add mandarin orange slices and remove from stove.
Serve over the chicken
