I recently found a microwave recipe for Wonder Bun, and have been playing around with it. My Wonder Bun, when cut in half for a sandwich, revealed a huge air pocket in the middle, so I began thinking about pitas...and poured a batch of batter onto a plate. What I got was a sort of tortilla, but have been hard at work perfecting the tortilla. Here's the recipe:
Microwave Tortilla for 1 (flexible, freezable, reheatable) 1 T. chia meal 1 T. flax meal 2T. almond flour 2 t. tapioca flour (a must--this is what gives flexibility) 1 t. olive oil (coconut oil won't work here--it causes them to break) 1 egg white 1 T. water 1/2 t. baking powder 1/2 t. cocoa powder (optional--for color only. Will not impart taste)
T = tablespoon, and t = teaspoon (I come from the old school--the one with Home Ec class)
Combine flours and powders in a cereal bowl, mix well, and set aside. In a separate bowl, add egg white, olive oil, and water--mix until frothy, but not foamy. We're not making meringue here!
~Plate DOES NOT need greasing--oil is already in the batter~
Pour batter onto center of microwave-safe plate (salad or dinner-sized)and nuke on high for 60 seconds (in 1000W oven--other wattage will need time adjustments). Remove plate to cooling rack.
After plate has cooled off for a couple of minutes, take a butter knife and gently begin peeling tortilla away from plate, starting around the rim, and slowly working toward the center. Once the tortilla is free of the plate, turn it over and return it to cooling rack minus plate to cool completely before use.
Makes 1 6" tortilla for tacos, enchiladas, fajitas, etc.
Freezing: be sure to put some sort of paper between layers. Reheating: Nuke on plate for 30 seconds on high.
Feel free to mess around with other GF/LC flours, but DO NOT mess with the tapioca flour part--too much tapioca makes them rubbery, and not enough makes them break. Replacing 1 T. almond flour with 1 T. chestnut flour makes them more bread-like, but you have to double the water above.
Who knows? Maybe someone out there WILL come up with a microwave pita yet! I look forward to it. :) I'm still working on a larger size for burritos, and using the microwave turntable as the plate.
