I have a dish using zuccinni that I love!
2 small-medium zuccinnis 1 medium onion 1 green bell pepper 1 red bell pepper 1 yellow bell pepper 3 cloves of garlic 3 tbs olive oil salt and pepper to your taste 1 medium tomato 1 tsp dry basil 1 tsp dry oregano
Dice all the veggies and mince your garlic. Heat oil in large skillet and add your veggies and garlic. Add in your herbs and saut� till veggies are tender. Add in tomato and cook for 3-4 minutes longer. Season to taste.
