I have a dish using zuccinni that I love!
2 small-medium zuccinnis 1 medium onion 1 green bell pepper 1 red bell pepper 1 yellow bell pepper 3 cloves of garlic 3 tbs olive oil salt and pepper to your taste 1 medium tomato 1 tsp dry basil 1 tsp dry oregano
Dice all the veggies and mince your garlic. Heat oil in large skillet and add your veggies and garlic. Add in your herbs and sauté till veggies are tender. Add in tomato and cook for 3-4 minutes longer. Season to taste.
