I just do water so that I can regulate my own sodium. You could make it with vegetable stock. I figure this way: vegetable stock is just veggies cooked in water (with lots of added sodium) The veggies you use will flavor the water. Here is what I put in: onions, leeks, celery, carrots, white cabbage, green beans. Then, if I want a little thickness I add white beans and/or ditalini or other small pasta.

I use V8 in my soup sometimes. Something like pasta sauce and canned tomatoes with the juice make good bases too.

im doing low carb diet.I want to know besides tomato juice for vegetable soup is ther any thing lower in carbs I could use?
