Thank you for the Goodie, the kind words and the friend add. I've just added you back. I'd like to invite you to join the team "At Goal and Maintaining + TRANSITION to MAINTENANCE. I've emphasized the last part because we have many members in that category. There's support, resources and encouragement in adjusting to the new reality.
I see you will also be training for a 5K by run/walk. I started that nearly 30 years ago when my run intervals were only 15 SECONDS. I increased those so gradually, it took me 6 months to run that first 5K, but look! I'm still at it.

Good afternoon, April! Thank you so much for your kind words on my blog! I hope this note finds you well!

I have a cookbook called "Cooking with Gluten and Seitan" by Dorothy R. Bates and Colby Wingate. This cookbook is small but it is packed full of good recipes! The recipe is on page 39 and is called Sausage Patties. It makes 16 patties. It's a little tricky getting the right consistency and it takes patience to shape them but it's worth it if you have the time to spare. The ingredients are really inexpensive too!

I'll put the recipe in a blog if you'd like me to or if you'd rather buy the book you can probably find it on Amazon used.
