Losing the weight for good, after baby!

It has taken me a while to deprogram myself from seeing food as something other than fun, comfort and reward. It's fuel and I am grasping that. It can still taste good, but not every meal needs to be a feast. And if I am not feasting, it does not mean that I am eating like a pauper.

Now that I am entering the last month of my pregnancy (due 7/23/14) all I can think about, aside from baby!, is that I can't wait to get this weight off for good and start living a healthy life with my family!
I want to be a healthy, happy wife and mom! So here I am.

Sadly, the 5 a.m. is necessary for me as well. I have work at 8:00 and a medium-long commute :).

STARTER KALE:

I'd definitely rec. a salad b/c I still have issues cooking it sometimes.

Get one bunch of kale and put it in a large bowl. Cover it with cold water and swish it around. Let it sit for a few minutes. This will let the sand, etc. float to the bottom of the bowl so you can just pluck out the now clean kale.

Tear the leafy bits off the main stem. I like to shred them with my hands to make easier bites.

Dry it in salad spinner.

Put in large bowl and dress- any kind of vinagrette is good b/c it can break down the kale a bit. Personally, I like to use Green Goddess or similar and then I add a sliced up apple (I like Fuji) and some dried cranberries. I really enjoy salty/sweet salads though. Otherwise, any vinagrette will do or just some lemon juice and olive oil!

I like to refrigerate it for an hour or so to get the kale a little softer, but you can eat it right away. The great thing about kale is that that sucker does NOT wilt. I usually make a huge salad and eat off of it for 3 days.

So I read your note about "what to do with Ricotta", and just HAD to come to your page... You sound like a riot (and a well rooted person)!!!
I may stop by and check in every once and again, assuming you don't mind! LOVED the idea of the breakfast casserole, yum!!
