LOWCARBING ON A BUDGET

Ever think that low carbing has to be expensive? It doesn't, and I'm out to prove it. I'll be posting menus, recipes, shopping lists, and prices for low carb eating. A couple of things you should know. First, these menus aren't exciting. After all, food should be a source of nutrition, not entertainment. There's a lot of duplication and a lot of leftovers. That's the way I eat. Living alone and cooking for one will do that to a menu.

Second, prices are those I've seen here in Idaho the last couple of weeks. Most are regular prices, not sale prices. Your prices, of course will be different.

Third, these are not "real" menus, in that I've just made them up on paper. I'm living with my parents at the moment and low carb is freaking them out enough without adding a budget element to it! But I have done it in the past for real.

Do you miss it, MAW? The baking? I think I need to focus on nutrition and cooking with the knowledge that I don't have to give up baking...just that I won't do it often and when I do I will do it different. That is where I am at today anyhow, lol, sometimes I feel like a roller coaster.

Starting on Sunday I'm going back to induction for 2 weeks. I've strayed from the fundamentals of the LCHF plan more than I would like and I am recognizing it for the slippery slope that it is and putting a stop to it. I'm home this weekend so I'll have more time to shop and food prep and meal plan for our crazy week next week.

Hah! No, my granddaughter doesn't have Wedgwood dishes...the Wedgwood in the photo is a miniature serving tray I picked up at a rummage sale for $1.00. I just thought it was cute. I really seldom let the kids play with it, because it seems so fragile.

I think your meals for 4/15 looked pretty good to me :0) Those who don't eat LC might not think so, lol. The day I ate a meat stick and cheese for lunch someone said they wouldn't survive off of that! Yummo!
