LOWCARBING ON A BUDGET

A couple of things you should know. First, these menus aren't exciting. After all, food should be a source of nutrition, not entertainment. There's a lot of duplication and a lot of leftovers. That's the way I eat. Living alone and cooking for one will do that to a menu.

Second, prices are those I've seen here in Idaho the last couple of weeks. Most are regular prices, not sale prices. Your prices, of course will be different.

Third, these are not "real" menus, in that I've just made them up on paper. I'm living with my parents at the moment and low carb is freaking them out enough without adding a budget element to it! But I have done it in the past for real.

Thanks for visiting my blog! Good question about the low carb element. I should write about that. You know that it is tricky to eat low carb on a budget!

I have totally changed how I cook. I have cut carbs from my recipes and serve carbs at meals a la carte. I don't eat rice or potatoes so they are always served in a separate pot rather than in my soup or casserole. My family has really cut down on carbs as a result of the changes and they don't even realize it. emoticon

The real key is using spark people to track carbs so that I can decide how to stay in my carb range (30-45 total). When I have something like lentils at dinner I just adjust the rest of the day to stay in range. It was tricky at first but works for me now.
