Ever think that low carbing has to be expensive? It doesn't, and I'm out to prove it. I'll be posting menus, recipes, shopping lists, and prices for low carb eating. I have done a modified Food Stamps Challenge for the past couple of years, limiting my purchases to $100 for the month and only eating what I purchased with my food stamps money. It can be done. And without eating ramen or mac 'n' cheese!

A couple of things you should know. First, these menus aren't exciting. After all, food should be a source of nutrition, not entertainment. There's a lot of duplication and a lot of leftovers. That's the way I eat. Living alone and cooking for one will do that to a menu.

Second, prices are those I've seen here in Idaho the last couple of weeks. Most are regular prices, not sale prices. Your prices, of course will be different.

Third, these are not "real" menus, in that I've just made them up on paper. I'm living with my parents at the moment and low carb is freaking them out enough without adding a budget element to it! But I have done it in the past for real.


Well, that was me when I started this persona in 2011 or 2012. I still get back to it sometimes, but I haven't been doing the Food Stamps Challenge lately. And the $100 per month is an old number. I think it was up to $135 a year or two ago.

    Thank you very much for the acknowledgement Spark Goodie. I am the type, that will overcome obstacles even in my choice of foods to eat. I have found a way to tolerate eggs and now some meats. The basis of most my afternoon meals is salads. I am adapting to Dr. Jason Fung? (Diet doctors here on the web) meal schedule. Even though we as diabetics are supposed to eat 6 small meals a day according to some. I am finding I am not hungry enough to do so. So the fasting between the 2 meals I do eat is the best way for me to go. I try not to eat anything after 6 pm and before 10 am And actually I eat only when I'm hungry.And I stress to everyone I know, drop the danged sugar! I think it is the enemy of the human body, and pretty much causes damage to us. And not just sugar but all products with sugar. It's so hard to get that across. But what really amazes me is my friends see me and know what is going on, but still won't lose the sugar. It's a never ending battle. I can't save everybody, I guess. I hope some.

    Thanks a lot for your kind advice about being careful with exercise at the beginning of the Low Carb life. I'm still adjusting and don't want to put myself on a bad position. So, I'll wait for next Monday to begin, little by little, with my fitness plan
