For Myself

I need to take care of myself for myself, but I know that it impacts my three daughters.
I've worked in professional kitchens since the early 1970's. Food is a major part of my life. Being a woman in a male dominated field was a struggle back when I started. Being an older woman in a physically demanding industry is a struggle too. I enjoy the struggle. I enjoy the long hours, the heat, the noise. The food.
In my early 50's my metabolism started to slow down. Whoops.

Other Information:
The year that I turned 50 I went on my first hike. My husband is a big hiker, and I wanted something else to share with him. Since then I've been hiking to celebrate all our 'milestones' - birthdays, anniversaries, holidays. Living in up state NY, we do a lot of Adirondack hikes, but we also hike in the Shawangunks and the White Mountains of NH.

I just got a recipe book that has instructions for how to fold 'en papillote' in one of the places and I had just thought that would be a cute presentation for using parchment paper! I used to do it simply like I did the aluminum foil packets!!! LOL

I use to drink 7 cups of coffee a day with two of them being dark roast from Starbucks. There were two days at the office when I was not able to get my two cups of Starbucks coffee (one at 8:30am and one at 12:30pm) - on those nights, I slept significantly better. Since then, I cut down to just two cups of 6oz coffee first thing in the morning (5am). When I cut out my 5am coffee to see if that would help me sleep - I did not notice a significant change in my sleep so I added it back in to my diet.

Morning. Were you happy with the whoopie pies?

My beet chips were a bust....maybe they weren't thin enough because they were taking too long. Just another 5 minutes....but then DH cranked up the oven without my knowing it and they burned. I could have clobbered him. They were nothing more than charred crisps, lol. Next time, I will try to simulate a food hydrator and try really low heat over many hours. I was so surprised on the shrinkage.

I have one beet I roasted....saving it for a beet and goat cheese green salad. Never had it, but others seems to love it. Maybe I'll do that today, but I think I need to stop at the store and get a fresh lemon for the dressing.

Other than that, I will try to ramp up the fitness minutes this week and continue my Food Plan. Oh, and client work....lots of it. I daringly made plans with DH to get away for a week mid February.....I must be nuts....but I'm doing it anyway.

Wow....that is a very intersting whoopie pie recipe! You are so creative in the kitchen. I wish you would write a cookbook.....I surely would buy it! With working so much, I don't have much time to play in the kitchen like I used to....I am looking forward to those days again.

Yes, had a great playdate. Granddaughter is very good at jigsaw puzzles for her age; games, not so much.....which I really like; she prefers imaginative play much more.

Have fun in the kitchen today.... and a healthy and fit Wednesday! emoticon

I LOVE working in my yard! It's very meditative for me, working close with the plants and rocks, etc.

Sleep is still light. I did manage some lucid dreaming in between the hot flashes - that's always fun (lucid dreaming, not the hot flashes). The cat didn't come into the bedroom all night, so I kept getting up to check on her because she wasn't in her usual place. The vet's coming out again today at lunch to look at Eostre. He thinks she now has an upper respiratory infection :-( I hate seeing her struggle so much. I hope this heals her.
