I read your "What the heck is going on" blog. I have been tracking my daily weight gain and loss for 6 years now. Even though I am 65 I have the same monthly cycle pattern. It is crazy but somehow I have lost 70 pounds. Hang in there.
Hey! Yes, spaghetti squash is super fun to cook with! The "rice" was a bit of a stretch but it's obviously a great replacement for spaghetti. A small one will cook in 5-6 minutes in the microwave (let it stand another couple minutes and finish cooking in its residual heat). I like to top it with sauteed veggies and lean protein (tofu for me) and a light pesto sauce with balsamic vinegar, cottage cheese, lots of basil and garlic, some roasted pinenuts (or hemp hearts!) and a sprinkle of parmesan cheese or nutritional yeast. SO GOOD! And best of all I get to eat big portions. ;)
