Challenge of my life time

I have always been a size 8/10. Now in my 40s and have been dealing with injuries to my legs. As a result I have had be bedridden for weeks at times, and other I had to be off my legs and have them rasied. During this time I have gain 30 lbs. It is hard now that I am some what mobile but still lack full movements of my ankles. So working out has been tough. But I am determined to get the weight off especially for my legs sakes. My Goals:
Get back down to my normal weight and gain back as much use of my legs as possible. Stay on my target each day by streching and doing what execise I can and increase when I can.

My Program:
Low Cal, fat and sodium.
High Fiber and Protein.
Trying to minimize carbs.
30 min a day streching and light muscle workout in a.m. 15 mins streaching at night.
