I'm not sure about walking shoes, specifically (because I'm a runner), but I should think a running store might be able to help. When you get fitted, they usually look at (or ask you about) your arches and sometimes they will do a gait analysis. I honestly had better luck doing research on my own, but I think that had more to do with the store that I went to...will never go back to that particular store!
I really recommend insoles, too. I never used them before in my running shoes, but I got a pair about a month ago because I was having issues with pf and metatarsalgia (pain under ball of foot) and they really made a huge difference. The only problem is they made my shoes a bit tighter than I would like, so you may need to go up a half size if you use after market insoles.
