Hope you are enjoying sparkpeople site. Want to recommend that you cook in batch and then freeze in appropriate portions which has helped me out tremendously when I am able to do it.
I make this onion, peppers, eggplant, chop meat with favorite healthy tomato sauce. (Of course cube eggplant,slice onions & peppers, cook chop meat separate then mix with sauce and above cooked)
I measure out 2 cups of mixture and freeze then pull out for dinner with a salad this way you don't have to cook each day. On the internet there are many recipes for freezing things and it help since when you only one cooking each night might not be fun or economical.

Hi Lilly! I wanted to recommend checking into the Ninja 3 in one cooker. It is a stove top,oven,slow cooker,steam baker all in one. I got mine before Christmas and love it! Checkout some of my blogs for it. You can do great layered meals even using frozen fish and boneless chicken! Grain/pasta on the bottom,metal rack on top of that with the meat and veggies nestled around and on top of the meat and in 30 minutes or less dinner! Steam baking cakes uses 1/3 the fat of regular recipes. I think it would be great for your low fat cooking! 1109 days ago
