Ha ha, I miss you too. I was stalking your page a few days ago.
I am easing back into sparking. I gained 10 lbs over the holidays but back down 4 so I am only 6 away from my low. Sparking helps keep me motivated. You will see me around more.

Oh my goodness I just actually went "ooooo" out loud at your verde chili recipe! YES PLEASE!
SO the veggie soup was an improv on my part but it goes like this:
(These are the veggies I had on hand, I'm sure you could do whatever!)
- BIG bag of frozen mixed peas, carrots, beans & corn (I'd say it was probably the size of 2 of those frozen steamer bags)
- Can of chickpeas, drained and rinsed
- Handful of mushrooms, chopped
- 1 large onion, chopped
- A whole bunch of minced garlic
- A bunch of spinach, stems removed (I'm sure a whole bag of frozen chopped spinach would work too)
- 1 green pepper, chopped
- 6 cups of veggie or chicken broth (I had 3 veggie and 3 chicken on hand lol so mine was a half and half)
HOW TO: Saute onion and minced garlic in the bottom of a big pot, add the green pepper and saute some more. Dump in frozen veggies and stir a little, dump in everything else and here I added a little bit of Old Bay and red pepper flakes. I wanted it spicy so I added quite a bit of red pepper flakes, and just a little Old Bay (its salty!) Empty all of the liquids into the pot, add the spinach and stir (it will wilt) and bring to a boil. Reduce heat and let simmer. I think I left mine simmering for about 45 minutes.
I just ate it for lunch and although it is just veggies, the beans and spinach make it pretty filling! Sorry I don't have exact numbers on the spices but I know my level of heat does not equal others preferences so you could really just add like salt & pepper if you wanted! Good luck!!!!
