The 2014 Reset Button

I lost weight in 2012, and gained a bunch of it back in 2013, completely derailing my goals. 2014 cannot continue that trend!

To put some numbers on things, here are my goals for 2014:

* Lose 20 pounds.
* Gym 21 times per month -
** Boot camp 4 times/week.
** Active recovery between boot camp sessions
* Eat clean 80% of the time (vegan, healthy, balanced)

Let's do this.

The vegan cheese was crazy good. I found some recipes on line for nut-based cheese. Have you ever tried making it?

Fries with guac are life changing! I cut up a potato into sticks, used like a tsp of oil to coat them, sprinkled them with portabello salt (although I imagine that regular salt would be fine, or some sort of seasoned salt) and baked them until they were a little brown and crispy.

And then smothered them in guac. SMOTHERED. Like an entire avocado. Honestly, better than cheese fries. And I love me some cheese fries.

Thanks for the reminder about B12, my multivitamin has it in it, so as long as I take that I should be fine, right?

I will not move to Sri Lanka until August, so I am stuck in West Africa, land of lame veggies, during this year's vegan challenge! On the bright side, I have sweet-talked four of my colleagues into doing it with me, as well as one student. The student is vegetarian anyway, so it is not a huge stretch for her, but a couple of the colleagues are confirmed carnivores.

I am super excited for Sri Lanka. I emoticon South Asian food, and just love that part of the world, plus the job will be a good new challenge for me.

Any great vegan recipes for me?
