The mac and cheese recipe, I added pepper, a dash of nutmeg, two eggs and chopped salami (if I don't add salami, I add ham) In my usual recipe, it would have these plus things I don't need, like white flour and butter for the white sauce. So this recipe is healthier than mine. I am generally leery of short-cut recipes because they are often less healthy, I don't use ones that contain soup mixes or ketchup or mayo or any sugar. And like you, I like the second-day pan-fried and crisped mac and cheese (also love second day lasagna, polenta and risotto this way as well)

Oh how nice to see your face on my page! Funny because my comment below was last spring working in my garden and I just came in from doing fall clean up. How is your cholesterol doing? Thank you for the flowers! I just came in from raking my back yard, collecting twigs.. and noticing a few things beginning to come up like the rhubarb and daffodils. There is still a lot of ice and snow here but it is glorious out today. And that is my cue... I always have better luck with healthy eating when I am outdoors every day. Oh... just remembering where I was last June I am getting excited. My knee injury July 1st set me back 15 pounds and a lot of bad habits. Last night... well, I won't go there. Suffice it to say I am on track this afternoon and feeling optomistic. You have a good year too. Let me know if there is anything you need for support. We are such a quiet team now but I was approached to lead a start up team and they said the committment was only 3 months.
