thanks for your comments and for adding me as a friend.
As far as the whole organic is better/isn't better...I think the verdict is still out. Of course pro-organics say it is heathier b/c of the lack of pesticides, but I think what the article is referring to is that veggie A has more vitamin x than veggie B is false. There are many different variables that come into play based on location, soil nutrients, and adequate water. I haven't seen a study done where one organic and one conventional item were grown with the exact same conditions with an outcome of one being better than the other. I'm a pro-organic girl myself (when I can), but I see where the article is coming from. ---just my 2 cents :)

Hi there,

I wrote a blog about everything that Paleo means a few days ago so you should check it out. It's called "Traveling back in time." The basic idea of Paleo is that you only eat the foods that were available to our Paleolithic ancestors because those are the foods that our bodies evolved to eat. The advent of farming and the Industrial Revolution have brought about the ability to create other foods that nature never really intended us to eat (sugar, HFCS, salt, grains, legumes). Our bodies haven't yet evolved to process them correctly which is why we are seeing a rise in obesity, insulin resistance and other physical problems.

On Paleo, you can eat as much as you want of the following foods: lean meat, fruits, non-starchy vegetables, and healthy fats like nuts, natural nut butters and certain oils. Because your body knows what to do with these foods, it can process them efficiently and you feel satisfied.

Back in early August I had a VO2 max test to test my heart rate, endurance, etc. From it they were able to tell me my 5 heart rate zones. This allows me to know what level I'm working at. Ultimately your zones will change as you get in better shape and you will be at a higher heart rate (but lower zone). I know mine are probably a bit different than where they were when I initially took the test, but I work off of those numbers. Here are some websites that explain them.

e-zones.htm

My ultimate goal is to be able to "jogg slowly" and stay in Zone 2 as the websites seem to think is common. For me, a jogg will bring me up into Zone 3 pretty quickly, and before... I couldn't hang out in zone 3 for long periods. So, there is much improvement, but always more to make.
