I've always loved fruits and veggies and I've been using whole grain since first following the South Beach diet (no longer following) back in 2004. I like the term "whole food plant based" way of eating - that's exactly what I'm doing. I haven't had any processed food since I started this. I make our bread, but I can't remember the last time I had a piece - I just don't tend to eat it! As for oil, the only time I use it is in the bread and I've cut that back to 2 tablespoons. I will use the oil spray when cooking on the griddle (pancakes), but that's not very often and it makes a huge difference. I also purchased some coconut oil and I've used that to "grease" a pan for baking. Sometimes I'll line the pan with parchment paper - depends on what I'm baking.

I still continue to place a meal in the freezer every week and remove one meal. I've got a spreadsheet tracking what's in the freezer along with the date and the number of servings. It's actually become a very useful tool.

I like to try a new recipe every week. There are so many on the Internet, that it's not very difficult to do. It's fun to try out new ingredients. I also enjoy going to the food co-op where I can pick up all kinds of grains, beans, seeds, nuts, whole-grain flours, etc. from bulk containers where you can just get as much as you need. There are still some different things there that I haven't tried yet.

Personal Information:
I really struggle to maintain a healthy lifestyle for an extended period of time. I do just fine while I'm in the process of losing weight, but I cannot seem to maintain that weight for more than a year. At least this time, I started doing something about it before I regained all the weight I had lost.
