My journey as a vegan (starting the beginning of May, 2013) is continuing very nicely. I've really not had an problems with adjusting. It really does feel natural to me. I've always loved fruits and veggies and I've been using whole grain since first following the South Beach diet (no longer following) back in 2004. I like the term "whole food plant based" way of eating - that's exactly what I'm doing. I haven't had any processed food since I started this. I make our bread, but I can't remember the last time I had a piece - I just don't tend to eat it! As for oil, the only time I use it is in the bread and I've cut that back to 2 tablespoons. I will use the oil spray when cooking on the griddle (pancakes), but that's not very often and it makes a huge difference. I also purchased some coconut oil and I've used that to "grease" a pan for baking. Sometimes I'll line the pan with parchment paper - depends on what I'm baking.

I still continue to place a meal in the freezer every week and remove one meal. I've got a spreadsheet tracking what's in the freezer along with the date and the number of servings. It's actually become a very useful tool.

I like to try a new recipe every week. There are so many on the Internet, that it's not very difficult to do. It's fun to try out new ingredients. I also enjoy going to the food co-op where I can pick up all kinds of grains, beans, seeds, nuts, whole-grain flours, etc. from bulk containers where you can just get as much as you need. There are still some different things there that I haven't tried yet.

Personal Information:
I really struggle to maintain a healthy lifestyle for an extended period of time. I do just fine while I'm in the process of losing weight, but I cannot seem to maintain that weight for more than a year. At least this time, I started doing something about it before I regained all the weight I had lost.
