in reply to your question... I layered a dish with onions. topped them with plain fish, salt pepper and Italian seasoning. added more onions, more fish then seasoned. The top layer .. summer squash in slices, sprinkled with olive oil and cooked in convection oven till fish was flaky, mine took 35 minutes on 375 F. It came out really good. Served it on a bed of whole grain medley Santa Fe from Uncle ben's.. but I gave my hubby most of the rice emoticon
