Beef Stroganoff is really easy to make. You need a pound of each: ground beef, sliced mushrooms, sour cream and zucchini. I use a cheese grater to make noodles out of the zucchini (run them along the long way to make long noodles), and steam them. While they are steaming, brown the ground beef and drain. Add in about a tablespoon of bouillon (I use "Better than Bouillon beef flavor), and the mushrooms. Cook until the mushrooms are tender, then remove from heat and add the sour cream. Serve over the noodles!

If you don't want zucchini noodles, you can use a pound of egg noodles. You don't need a lot since the mushrooms really add a lot of veggies and bulk. Sometimes I just eat it with no noodles. You can also add garlic and other spices, just not too much salt since the bouillon has plenty of salt. Enjoy!

Favorite veggie-- green beans. However I like a lot of different ones. Just don't eat enough.
