You can call me Vivi. I'm a proud Canadian mama of an adorable toddler. I love to travel - Japan, Chile & Scandinavia are on the bucket list. I have an unhealthy love of coffee, chocolate & reality television. I like to read, bake and have passionate political arguments. Cooking is a work in progress and I'm a bit of a finance nerd.
Posted this on my feed, but not sure you'll see it there:
I do have the recipe but I used German ingredients and measurements. You can find lots of chia pudding recipes on SP and tweak them to your own taste, though. I'm still trying to find the best-tasting blend but here's what I had today:
1 cup of greek yoghurt, cup of unsweetened almond milk (or soy), 1/3 cup chia seeds, 3 tbsp PB2, 2 tbsp unsweetened cocoa powder, 2 tbsp brown sugar. Mix well, let sit a half hour, stir again to distribute the seeds (they swell as they absorb the liquid which is what makes the pudding texture), divide into two portions and refrigerate overnight. You can add a little more sweetener, too.
