It's not about losing weight, it's about gaining and maintaining health. It's about healthy aging and keeping my body strong and fit as I grow older.

~~~~~UNLIMITED~~~~~

ALL RAW VEGETABLES: romaine, kale, collards, parsley,
Swiss chard, carrots, spinach, tomatoes, cucumbers,
mushrooms, onions, celery, all lettuce, snow peas,
red & green peppers, (at least 1 Lb daily)

RAW, STEAMED OR FROZEN: asparagus, bok choy,
Brussels sprouts, cabbage, celery, spinach, onions, broccoli,
mushrooms, kohlrabi, okra, water chestnuts, peas,
string beans, green beans, zucchini. (at least 1 Lb daily)

NON GREEN / NON STARCHY: beets, eggplant,
onions, tomatoes, yellow & red peppers,
bamboo shoots, cauliflower, garlic.

BEANS, LEGUMES, BEAN SPROUTS, and TOFU:
at least 1 cup daily

FRESH FRUIT: at least 4 daily

NOT MORE THAN ONE CUP DAILY:
cooked starchy vegetables or whole grains, barley, oats,
brown rice, wild rice, squash, corn, potatoes, cooked carrots,

AVOCADO: 2 oz per day maximum

My Goals:

1) Healthy vegetarian diet, focusing on fresh fruits and vegetables.

2) Walk six days a week,
~3 miles 2 days,
~4 miles 2 days,
~5 miles 2 days.
3) Ride stationary bicycle or jump on trampoline at least 30 minutes daily.
4) Meditate daily.
5) Read something inspirational daily.
6) Write something inspirational daily.

Personal Information:
I am a 57 years young, vegetarian, looking to gain and retain good health as I age. I believe in a holistic approach to staying healthy. Other Information:
I love to read, listen to relaxing music and watch good movies. I like nature and the outdoors. My favorite vacation place is Sedona, AZ where my husband and I love to go hiking, exploring and just relaxing in nature. I also love living in Florida where the weather is warm and mostly sunny.

You are an Eat-to-Live inspiration! :)

I tried it for a while, but I was so hungry, yet tired of chewing. lol I am already a whole foods vegan, but I missed the grain foods on E2L. I think I may give it another go.

Thank you, Vikki, so much for your kind comments on my colorful blog! I guess you can tell that fall is probably my favorite time of year. I’d probably favor spring because of all the colorful blooms, but where I live, spring is just another word for rain! Ugh!
