I drain and bag up into individual bags as soon as I can, they cool far quicker portioned up.
I don't freeze with any extra liquid, just freeze them drained off. You can re-heat the rice in a minimal amount of boiling water and re-drain if you want, or dampen and microwave. Beans can just get tossed into whatever you are cooking.
