Meal prep is underway! I spend Saturday mornings volunteering, and Saturday evenings cooking. It's my favorite day of the week ❤️
Portable breakfasts are the best! Egg cups are basically mini omelettes (spinach, tomato, onion, garlic) sitting in a slice of turkey bacon and sprinkled with cheddar. No-bake energy bites are FULL OF GOODNESS, and the best part is that you can put just about anything you want in them! I used walnuts, pecans, almond meal, flaxseed, oatmeal, quinoa, dried cranberries, honey, and almond butter. Forgot the vanilla and salt, but I'll DEFINITELY make these again next weeK!
