Meal prep is underway! I spend Saturday mornings volunteering, and Saturday evenings cooking. It's my favorite day of the week â¤ï¸
Portable breakfasts are the best! Egg cups are basically mini omelettes (spinach, tomato, onion, garlic) sitting in a slice of turkey bacon and sprinkled with cheddar.
No-bake energy bites are FULL OF GOODNESS, and the best part is that you can put just about anything you want in them! I used walnuts, pecans, almond meal, flaxseed, oatmeal, quinoa, dried cranberries, honey, and almond butter. Forgot the vanilla and salt, but I'll DEFINITELY make these again next weeK!
Healthy BLT prepped for work lunch tomorrow! Turkey bacon, spinach, tomato, cheddar, pesto, whole grain sandwich thins.
Meals I could happily eat every day for the rest of my life: garlic roasted brussel sprouts with turkey bacon and almonds.
Still ate a crappy breakfast, but used it as motivation to work out later - which I haven't done in awhile - and made pasta with a delicious homemade tomato sauce. Really really enjoying being able to cook again.
