Home alone!

I had an extra day off by myself today! What a treat! It was warmer out too, so I went for a walk with the dogs down by the river. We enjoyed the fresh air and sunshine. Now I'm making squash soup for supper. It smells so good!

    Time at home alone is rare for me too - and VERY special. I can hardly get myself to leave the house when I have time alone in it!!!!!!

So glad you had a great day. I'm a firm believer in everybody needing a balance that includes alone time at home!!!! That's why I just HAD to comment.

I made up this recipe from a bunch I found on Pinterest. I used a squash called Sunshine (a type of butternut squash) from my mom's garden. It was so good! I think roasting the squash was key. It sweetened and intensified the flavour. I had 6 squash, so I roasted and froze the rest. I can't wait to make this again!

Huge carb cravings this week!

I haven't managed to get enough sleep this last week and I've been struggling with HUGE carb cravings and binging. I slept much better the last two nights and I had a couple of naps. I've also been using my DayLite for SAD. It's like magic! I have been having no craving or binging the last two days! Really reminded me I need to make sleep a top priority.

After travelling for work and Thanksgiving last week, I was so happy to spend the weekend at home.

I went for several walks, it's getting pretty cool out, but I layered up! It's nice to get some fresh air and enjoy the last of the leaves.

I also did some cooking/baking. I made pumpkin granola which turned out really good. I also roasted tomatoes and onions and then made it into spaghetti sauce. I just tossed them with a tablespoon of canola oil and garlic, basil, oregano and red pepper flakes. Roasted at 450 for about half an hour stirring every 10 minutes or so. Then pureed it. It was delicious!

    That recipe sounds yummy..wish I had more garden tomatoes left!!

The pumpkin granola sounds good too..is it a spark recipe?
