I think counting down to spring break is almost as exciting as counting down to the last day of school! In nine days I will be headed down to the Florida sun and warmth. Hurrah!
So for the time remaining until I go, I am kicking it HARD for Operation t.u.m.m. Careful and mindful eating, gettin' sweaty at the gym and on my runs, and sucking down the water. I notice a difference - last night's Pilates class was "easier" than it's ever been! My core is getting stronger!
- three miles on the TM. It's pretty windy, so I'm just going to make it an indoor run today.
- yoga class at noon. I NEED some yoga. My body wants to strrrrrretch!
- lots of water

- school work

Today was a really productive day! I ran some errands, cleaned up the house, and planned some meals and workouts. Yahoo!
I also made some AMAZING treats - the recipe follows. It's from the blog rabbitfoodformybunnyteeth.com - I highly recommend you go there. There are lots of great tips and even a how-to to make a workout shirt! I made one and I love it.
Drank tons of water, got in some GREAT sweat time, and found some treasures at the thrift shop (and yes, I do sing the song in my head when I'm in there). I got a Diane von Furstenberg wrap shirt for 2.50, and a denim jacket (I've been looking for one!) in PERFECT condition for 5.00. How awesome is that?!?
Not much else - tomorrow is a little 3-mile run and afternoon yoga. My body seriously needs some yoga.
Makes 6 bars
1/2 cup whole wheat flour
1 banana – mashed
1/4 cup sweetened shredded coconut
1/4 cup silken tofu – blended
4 Tbsp Splenda Brown Sugar Blend (or 1/2 cup brown sugar)
1/2 tsp vanilla extract
1/4 tsp rum extract
1/2 tsp salt
1/2 tsp baking powder
1/2 Tbsp powdered sugar
1/8 tsp cinnamon
Preheat oven to 350 F degrees. Blend the tofu in a blender until smooth. Transfer mashed tofu into a mixing bowl. Mash the banana and combine with tofu. Next, add the brown sugar, vanilla extract, rum extract, and coconut to the tofu banana mixture. Stir until well mixed. In a separate bowl, mix the dry ingredients (flour, baking powder, and salt ).Pour the tofu banana mixture into the dry ingredients and gently fold the ingredients together until well combined (be gentle, and do not over stir the batter or the bars will come out tough). Spray a 9 x 5in loaf pan with nonstick spray. Pour batter into the pan and bake for 13-14 minutes.
Note: The center should be a little gooey and soft. If overcooked, they can have a tough rubbery texture. There is no harm in undercooking the bars since there are no eggs!
If you’re feeling fancy, mix powdered sugar and cinnamon together and sprinkle over the bars right after they come out of the oven. Cut and serve for a healthy dessert.

I have class in a short bit, but enough time to recap my day. I had a really hard time getting up with the alarm this morning - didn't sleep very well last night. Ugh. So 30 minutes of snooze later, I got up and ready to run. The plan for today was 8.5 miles - I mapped it out over the weekend so I knew where I was going. Since now I guess I'm in "real training mode," I think I should be keeping track of when and what I eat and how I feel. So I had a little cereal and a cup of coffee about 30 minutes before I went out. I felt good, but I think I could probably stand to wait a little closer to an hour after eating before I run. Took a Hammer gel with me, had it with some water about an hour in. I am quickly getting used to the Hammer gels and I love the energy it gives me to finish strong. My legs started getting a little sore toward the end, but I kind of expected it, as this was MY LONGEST RUN EVERRRRRRRRR!!!!!! Yes, that's right. Hurrah!
Then, because I'm insane, I went to the gym to take a cycle class and an abs class (but to be fair, I went to cycle to see how it was run, and I did a VERY EASY recovery ride). Dropped off my paperwork to work as a Spinning instructor (yay!) and got a free membership. Look out - I'm going to be totally buff by summer. The gym here is SOOOO nice and I could spend a very long time there. I can get back into some strength training and a more regular routine! Yay!
I pretty much stuck to the eating plan today. I *did* have some chocolate chip cookies after my run because I was RAVENOUS and couldn't wait for my enchiladas to bake, but I am doing well with Operation T.U.M.M. My beachy self is going to be ready ready ready for the sun and sand and sunscreen and bikini!
I am going to have some dinner in class tonight. I made a PB&J and have a pear and blue cheese. I have decided that I can't sacrifice my good eating for class - everyone is just going to have to deal with me eating my food there. I can't go through the rest of the semester having a latte and a muffin for dinner three nights a week!
OK! Off to class and to have some dinner!
