Today was a really productive day! I ran some errands, cleaned up the house, and planned some meals and workouts. Yahoo!

I also made some AMAZING treats - the recipe follows. It's from the blog rabbitfoodformybunnyteeth.com - I highly recommend you go there. There are lots of great tips and even a how-to to make a workout shirt! I made one and I love it.

Drank tons of water, got in some GREAT sweat time, and found some treasures at the thrift shop (and yes, I do sing the song in my head when I'm in there). I got a Diane von Furstenberg wrap shirt for 2.50, and a denim jacket (I've been looking for one!) in PERFECT condition for 5.00. How awesome is that?!?

Not much else - tomorrow is a little 3-mile run and afternoon yoga. My body seriously needs some yoga.

Coconana Bars
Makes 6 bars

1/2 cup whole wheat flour
1 banana – mashed
1/4 cup sweetened shredded coconut
1/4 cup silken tofu – blended
4 Tbsp Splenda Brown Sugar Blend (or 1/2 cup brown sugar)
1/2 tsp vanilla extract
1/4 tsp rum extract
1/2 tsp salt
1/2 tsp baking powder

Optional Toppings
1/2 Tbsp powdered sugar
1/8 tsp cinnamon

Preheat oven to 350 F degrees. Blend the tofu in a blender until smooth. Transfer mashed tofu into a mixing bowl. Mash the banana and combine with tofu. Next, add the brown sugar, vanilla extract, rum extract, and coconut to the tofu banana mixture. Stir until well mixed. In a separate bowl, mix the dry ingredients (flour, baking powder, and salt ).Pour the tofu banana mixture into the dry ingredients and gently fold the ingredients together until well combined (be gentle, and do not over stir the batter or the bars will come out tough). Spray a 9 x 5in loaf pan with nonstick spray. Pour batter into the pan and bake for 13-14 minutes.
Note: The center should be a little gooey and soft. If overcooked, they can have a tough rubbery texture. There is no harm in undercooking the bars since there are no eggs!

If you’re feeling fancy, mix powdered sugar and cinnamon together and sprinkle over the bars right after they come out of the oven. Cut and serve for a healthy dessert.

T-minus 11 days until the beach!

I have class in a short bit, but enough time to recap my day. I had a really hard time getting up with the alarm this morning - didn't sleep very well last night. Ugh. So 30 minutes of snooze later, I got up and ready to run. The plan for today was 8.5 miles - I mapped it out over the weekend so I knew where I was going. Since now I guess I'm in "real training mode," I think I should be keeping track of when and what I eat and how I feel. So I had a little cereal and a cup of coffee about 30 minutes before I went out. I felt good, but I think I could probably stand to wait a little closer to an hour after eating before I run. Took a Hammer gel with me, had it with some water about an hour in. I am quickly getting used to the Hammer gels and I love the energy it gives me to finish strong. My legs started getting a little sore toward the end, but I kind of expected it, as this was MY LONGEST RUN EVERRRRRRRRR!!!!!! Yes, that's right. Hurrah!

Then, because I'm insane, I went to the gym to take a cycle class and an abs class (but to be fair, I went to cycle to see how it was run, and I did a VERY EASY recovery ride). Dropped off my paperwork to work as a Spinning instructor (yay!) and got a free membership. Look out - I'm going to be totally buff by summer. The gym here is SOOOO nice and I could spend a very long time there. I can get back into some strength training and a more regular routine! Yay!

I pretty much stuck to the eating plan today. I *did* have some chocolate chip cookies after my run because I was RAVENOUS and couldn't wait for my enchiladas to bake, but I am doing well with Operation T.U.M.M. My beachy self is going to be ready ready ready for the sun and sand and sunscreen and bikini!

I am going to have some dinner in class tonight. I made a PB&J and have a pear and blue cheese. I have decided that I can't sacrifice my good eating for class - everyone is just going to have to deal with me eating my food there. I can't go through the rest of the semester having a latte and a muffin for dinner three nights a week!

OK! Off to class and to have some dinner!

Operation: T.U.M.M.

I read the really nice comments on my last blog, and you know what? I actually *do* feel like I'm on a roll! There are so many good things going on right now that I can't help it!

For the next two weeks I am doing Operation:T.U.M.M. (Tone/Tighten Up My Midsection). I am going to Florida with my mom over spring break and need to get my tum bikini-ready! So that means no more evening lattes and bagels/muffins before class, no more ice cream, and really watching my sugar and processed food intake. I am usually not so strict, but I think two weeks is do-able. And besides, I can feel myself getting a little lax with my eating - I've justified too many mocha lattes as of late and made too many excuses to get baked goods before class.

So no more (well, for two weeks anyway).

Today:
- TONS of water.
- Kill it at my Spinning instructor workshop! We are doing two rides today as part of the certification. I'm ready to bring it.
- Fake it 'til I make it. I am not very outgoing by nature, but I am getting in the mindset that I *have* to be to teach Spinning.

Wish me luck today! I am very excited and a little nervous. This is a huge step toward my future!

I love to read quotes, and some of my favorite quotes have to do with luck. I noticed that most luck quotes have to do with opportunity and working hard... So lately I've been grabbing every opportunity that comes along! And it's paying off.

On March 26th I teach my first Spin class at my school's rec. center. I have classes two nights a week! I'm really excited. I'm going this weekend to get certified. Which means that I can look into *other* spin jobs at different places, which might lead to something more. It's funny - while I'm not currently in "education," I'm in a different part of education - teaching people how to take care of their bodies. I guess this is what happens when I open my mind to new possibilities.

I booked a trip to Florida! My mom and I are going to Sarasota for our spring break. The hotel looks so nice - it's right by the beach, and there are TONS of water sport things to do. I'm really excited to try stand-up paddleboarding! I still am amazed that my vacation plans include seeking out active things to do. Don't get me wrong, I LOVE sitting on the beach, but I also want to do as much as I can.

Speaking of the beach - for the next two weeks I think I am putting myself on a strict bikini diet. Not depriving myself, but instead filling up on happy-flat-tummy foods. That starts tomorrow - I think "March to the Beach" will be my March theme, at least until I *go* to the beach.

Today:
- 6 miles at my mom's house. Get it done!
- drink lots of water
- enjoy the friend visit!
- plan out some March goals and workout schedules
