Sunday, February 16, 2014 after church, there is a soup and sandwiches potluck. Since I am the only vegan participant I always take something I am happy to eat. This morning, I cooked up some leeks in broth. Then I added a head of cauliflower, some sliced garlic cloves, a chopped zucchini, and a few yukon potatoes along with veggie broth. When everything was done, I threw it in the blender. I saved myself a bowl and I think it's delicious. I hope others find it delicious, too.

    Sounds emoticon and I bet a lot of people try it thinking it is a cream soup. I bet they love it too and the joke is on them, no cream but all delicious health! emoticon

Tuesday, February 11, 2014's whats on my plate for this week. I made eggplant "parmesan" (Really, what do you call it when it doesn't include cheese?). I use Dominex eggplant cutlets, lots of mushrooms, onions and spinach with pasta sauce. I especially love that, since they are frozen, they are ready for use any time and don't go bad. This morning, I cooked up shredded carrots and baby kale, tofu and peanut sauce. Last night, I cooked up brown rice. I am hoping for a snowy day on Thursday so I can cook up something delicious like a bean soup and make the windows all steamy. So many foods to love emoticon ! Now I am off to the gym. I'm going to walk to the gym even though it's cold because it's only half a mile and finding a parking place can be the most difficult part of the whole process!

So this week I have been eating lots of rice salad. I use this recipe:
ice-salad-with-grilled-chicken. I add cilantro, extra veggies and a can of black beans instead of the chicken. It is definitely a favorite. I also made pasta with veggies and sauce (I had a friend over for dinner and I had made the rice salad already when I discovered she was not a cilantro lover.) On Wednesday all the snow and being home made me want something warm and delicious so I made the dilly stew from the ppk.
ith-rosemary-dumplings/. I made the recipe pretty much as written except I skipped the dill since I didn't have any. I did add a little extra rosemary to the stew part. Delicious and it smelled devine while cooking. I also made a batch of pumpkin muffins to round things out. So that's what I've been eating this week in some variation for breakfast lunch and dinner! Now I am trying to decide what ingredients to get for this weekend's cooking extravaganza.

I just re-signed up at the gym I used to belong to because they have a pool. I am going to have to buy a swim suit since it's been so long since I have been swimming. I am so glad to be able to buy a suit online since there aren't any in the stores right now. So... I am off to buy a suit before I head off to work.


Cooking for the next week

I still have leftover enchiladas and onions/potatoes/cabbage and tomatoes so I only cooked chili this morning. I will probably end up cooking some brown rice and cranberry orange muffins tomorrow. I love having food in my fridge already prepped so I have choices about what I will eat. I must admit I have a hard time eating salads or smoothies this time of year. I end up cooking most of my greens and veggies in the winter. I think I just want food that warms me up. Bring on the casseroles and soup.
