So...here's whats on my plate for this week. I made eggplant "parmesan" (Really, what do you call it when it doesn't include cheese?). I use Dominex eggplant cutlets, lots of mushrooms, onions and spinach with pasta sauce. I especially love that, since they are frozen, they are ready for use any time and don't go bad. This morning, I cooked up shredded carrots and baby kale, tofu and peanut sauce. Last night, I cooked up brown rice. I am hoping for a snowy day on Thursday so I can cook up something delicious like a bean soup and make the windows all steamy. So many foods to love ! Now I am off to the gym. I'm going to walk to the gym even though it's cold because it's only half a mile and finding a parking place can be the most difficult part of the whole process!
