2 1/2 cups rolled oats
1/2 cup steel cut oats
2 teaspoons baking powder
1 teaspoon ground cinnamon (I bump this up to 2 teaspoons)
1 teaspoon nutmeg
2 cups milk ( I use 1 percent)
1 egg, beaten
1/3 cup applesauce ( I use 2 of the little snack cups of unsweetened)
1/4 cup oil or 1/4 cup melted butter ( I use margerine)
1/4 cup sugar plus 1/4 cup brown sugar (I use all brown sugar)
(Rasins dried cranberries , unsweetened coconut) any combo you like I add a full cup of this combination
1 Preheat oven to 400°F.
2 Lightly grease a 2-quart casserole dish. I spray it with Pam
3 In a large mixing bowl, combine all the dry ingredients -rolled oats, steel-cut oats, baking powder, nutmeg and cinnamon.
4 In a separate bowl, mix together milk, eggs, applesauce, oil or butter, sugars, and vanilla
5 Stir the liquid ingredients into the dry and pour into prepared casserole dish.
6 Bake, uncovered for about 20 minutes.
7 take out of oven and add in your fruits.
8 return to oven and bake, uncovered for about 20 more minutes or until top is lightly brown.
I portion this out into plasticware and load enough for the week in the fridge.
For the guys I portion ¾ cup, for me I have 1/3 cup which it a good amount for me and a little fruit
We warm it up in the mornings, add a little milk or yogurt maybe some cut up fresh fruit.
