50 Pounds

Well, It's been a fun road getting here. I learned a lot. I had some ups and downs. Mostly ups! I love my new body. I am sure I will love it more another 50 pounds from now. I love my new lifestyle. I get out more, I am with family and friends more. I eat better. I have found new foods and discovered I LOVE LOVE LOVE them. I never knew a person can eat all the foods they enjoy and still become healthier. I love every meal I make and I get so excited when I cook for someone and they love it too. Just by changing my attitude towards food, becoming more active and applying the same reason and logic I use in everything else in life to my food choices, I have become a stronger healthier and happier person. My wife has even noticed the muscle growing in my shoulders and arms. My nephew has even pointed out that I don't look so "round" anymore. That makes me feel so good. I am so looking forward to reaching the next half of my goal. I want to thank my supporting wife for encouraging me to keep living my dreams, and I want to thank SparkPeople and it's community for supplying the reason and science that has changed my life.

    Great blog! I love hearing things like this: " I have found new foods and discovered I LOVE LOVE LOVE them. I never knew a person can eat all the foods they enjoy and still become healthier." THIS is such a break-out of the "diet" mindset, which is usually geared towards "restriction and denial" when in fact, adjusting to a healthier lifestyle can offer quite the opposite - "new" foods to love, and the ability to experience the full enjoyment of a varied diet of delicious foods. Congratulations!

    Congratulations. I give a lot of credit to Spark People, it is an awesome site. I still have not got too much into cooking new recipes, but that is a goal. Keep up the good work.

40 Pounds

Today, I reached the 40 pound mark. Almost halfway to my goal. It has been an educational ride getting here. It was not real easy at first. It took some time to line up my sodium, cholesterol, fat and calories. But I have done it. I rarely go over my sodium and cholesterol now. I find that I don't retain as much water and my blood pressure and pulse rate are lower. I am really enjoying the daily walks MCIANGEL1 and I go on and the lighthearted competition of Wii Bowling. The biggest change has been in how I look at nutrition. I really love food. I love food like I love MCIANGEL1. I have a passion for flavor. I love to try new and exotic foods. I still have that passion. Now I also have a passion to create foods that are not only good for my taste buds, but good for my body. I love that I am never hungry because I fill up on veggies and protein rich foods instead of the MEGA HIGH carbohydrate and saturated fat doused foods I once loved before this journey. I love my new life and the direction it's going.

60 Days

Tomorrow marks 60 days with SparkPeople Com. I must say, this site works. I have lost weight, learned a huge amount of information about nutrition and what to much and too little food can do to you. I have put myself in a place I am happy with. I owe all of this to the fine folks at SparkPeople. This site can and does change lives. One of my favorite activities is reading the success stories people post to their spark pages. They are encouraging and informative. I look forward to what the next 60 days will bring.

As of today, I have shed 10% of my body weight. I have significantly reduced my chance of a heart attack or stroke. I now stand a better chance of not getting type 2 diabetes. :-) I do feel like I have more energy. I can wear some of my old clothes again. I feel more motivated to keep going and maintain a healthy lifestyle. SparkPeople changed and saved my life. I will get to live a longer life with my wife. Be around to see my nieces and nephews grow up and be able to enjoy a more active lifestyle.

If you are someone you know is obese, please find help. It is not as hard as some people think. All it takes is a few lifestyle changes that can be introduced slowly. SparkPeople is a great place to start, or talk with your doctor about proper nutrition and exercise. Remember, if you are obese, you don't need to "go on a diet". You need to make lifestyle changes. positive healthy ones that people will notice and admire you for.

Really Good Pizza

My wife, MCIANGEL1 and I came up with this really yummy pizza recipe. Here is what it looks like before you cook it:



And... After:



It looked so good I just had to have a bite as soon as it hit my plate!

Here is whats in it for each pizza:

Chicken Breast (cooked), no skin, 3 ounces

Cabot Seriously Sharp Cheddar Cheese, 1 oz

Great Value No Salt Added Tomato Sauce, 0.5 cup

Flat Out Wraps, Light - Sundried Tomato (1 wrap), 1 serving

Cheese, String, Crystal Farms Light (1 stick), 0.5 serving

Pictsweet Seasoning Blend, 0.5 cup

TOTALS: Each whole pizza has:

385 Calories, 31 Carbs, 15 grams of fat and WHOPPING 41 grams of protein!

It's got some fat, but come on, its PIZZA!

Here is how we constructed this bad boy:

Grill the chicken and the seasoning blend together on a griddle if you have one or you can use a LARGE skillet. Once the chicken is cooked through, remove from griddle or skillet and set aside. Clean out the griddle or skillet and allow to cool. Place the flat bread on griddle or skillet and cover evenly with sauce. (To make the sauce, heat the tomato sauce in the microwave with salt free spicy seasoning of your choice, Italian seasoning and black pepper)
next, spread the chicken and seasoning blend evenly, then add the grated cheese. turn the griddle to medium high heat and cover with a foil 13*9 cake pan, if your using a skillet, cover with lid. Cook about 6 to 9 minutes or until flat bread starts to stiffen around the edges.

We cut ours like a pizza into 8 yummy slices.

    I am the wife, and had one of these pizzas for myself. I didn't feel like I was missing anything, in fact I felt like I was "cheating" on our healthy eating without actually "cheating" :) Love you Jimbo!
