I was hesitant but....

Okay so we have been eating a lot of chicken lately...and getting tired of it so I thought how about some ground turkey...but I was hesitant...I was like can I find a good recipe..will we like it....or will it be dry and tasteless. Well, I found a recipe for Mini Chipotle Turkey Meat Loaves. Let me tell you they were out of this world, Awesome!!!

So I will share:

1 small onion-coarsely chopped
1 medium carrot-coarsely chopped
1 stalk celery-coarsely chopped
2 chipotle peppers (canned in adobo sauce)
1 package of extra lean ground turkey breast
1/2 cup quick cook oats
2 egg whites

Sauce:
1/4 cup ketchup
1 tbsp chipotle pepper sauce (from the canned peppers used in meatloaf)
1 tbsp brown sugar

Preheat oven 350. In a food processor, add onion, carrot, and celery. Pulse until finely chopped. Add chipotle peppers and pulse until combined. In a large bowl, combine turkey and carrot pepper mix. Add egg whites and oats, gently mix. Place about 1/3 cup in of prepared mix into 9 wells of a muffin tin sprayed with nonstick cooking spray. Bake for 20 minutes.

Meanwhile, combine ketchup, adobo sauce, and sugar, set aside. Remove meat loaves from oven and spoon topping over each meat loaf. Return to oven 5-10 minutes. Let stand for 5 minutes before serving.

For each mini loaf

110 calories
1 g fat
165 mg sodium
8.5 g carbs
1.2 g fiber
2.2 g sugar
17.3 g protein

These are great and let me warn they are SPICY! but really good. We love spicy.

    I will have to try it! There are tons of fabulous recipes in sparkrecipes....I'll bet you can find tons of great chicken alternatives there. Not to mention lots of new ways to enjoy chicken!

Extra Motivation

Well, we had our weigh in yesterday for our Biggest Loser: Co-workers--I lost another 1.5 lbs-yay! (19.5 lbs total) Our Team Fat Chance has been in 1st place for the first 4 weeks but we were edged out by Team Flab2Fab by .035%-crap! Well, all my team mates were all very apologetic for their performance this week...but I say it is EXTRA MOTIVATION! to get back on top next week and hang on. Besides we have 12 weeks and we are just starting week 6. So all that matters is who is in 1st at week 12. I have loved this whole experience anyway win or lose--because I come out a winner with weight loss and better health.

  Your right-week 12 is where it counts. If the rest of your team is as motivated as you, You will be the biggest loser. But as you said you already are a winner. Great weight loss and good attitude. Keep up the good work.


Week 4---WOW!

Well, I am 4 weeks into this new life journey. I have lost 18 pounds-WOW! I have cut out the junk food, I have started exercising, and I feel so much better. So much has changed in a month. I am grateful. I am grateful that I found Spark to help me track and keep me motivated. I am also grateful that work started the Biggest Losers: Co-workers to add in a little healthy competition into the mix. My husband is also on this journey with me and he has lost 21 pounds-AWESOME!

I just wanted to give everyone a quick update on my progress. If I can do it-YOU can do it too. Thanks to all the Spark people out there for the motivating comments and warm welcome.

Can't wait too see what Month 2 has in store.

This recipe was sent to me today. I thought it really applies well to life and the goals we want to accomplish.

Recipe for Success
Servings / 1
Course / Light Meals

Ingredients
1 cup of vision
1 cup of commitment
1 cup of discipline
1 cup of self-control
1 cup of sacrifice
1 cup of conviction
1 cup of imagination

Instructions for the Recipe for Success
In a large part of your life, add 1 cup of vision. Make up your mind which direction to go and strive for it every day. Add 1 cup of commitment to your vision. Commit yourself everyday to reaching your goal. Add 1 cup of discipline to commitment and vision. Make yourself do what you must to keep the commitment and hold on to the vision. Add 1 cup of self-control.

Once you have the vision, the commitment, and the discipline the next ingredient is self control. No matter what temptations come, you have a choice. Add 1 cup of sacrifice. Once you have the vision, the commitment, the discipline and the self-control, the hardest ingredient is sacrifice. Be willing to give up bad habits for good habits. Be willing to give up old habits that don’t work for habits that mix well with other ingredients. Add 1 cup of conviction.

Have the courage to stand your ground knowing that you are mixing the right ingredients together in your life. Add 1 cup of imagination. Imagine what all this cooking will achieve in the end. Bring all of these things to a boil and remove all the unnecessary ingredients that have ruined you until this time. Now pour it all into the rest of your life and you have the recipe for success.
