Mini Wafer Cheesecake

I am working on cutting back on my desserts and I found this recipe on Spark People and prepared it. The author is AMBERNEZZIE. I made ˝ of the mixture with lemon and lime juice, the other ˝ of the recipe with dark chocolate powder and I substituted splendor for sugar. I was very satisfied with one cheesecake. I, like the others that have tried this recipe, gave it 5 stars. I hope you will try it—especially if you are battling the sugar monster, like me.

Mini Wafer Cheesecake

Introduction
A smaller version of a yummy favorite. Add your favorite fruit to customize. A smaller version of a yummy favorite. Add your favorite fruit to customize.
Number of Servings: 12
Ingredients
12 vanilla wafers
8 oz. cream cheese
1/2 c. sugar
1 tsp. vanilla
2 eggs
Directions
Line muffin time with foil liners. Place one wafer in each liner. Mix cream cheese, vanilla, and sugar on medium speed until well blended; add eggs. Mix well. Pour over wafers, filling 3/4 full. Bake for 25 minutes at 325 degrees. Remove from pan when cool. Chill. Top with desired fruit topping and enjoy. The picture show cherry topping.

Knock Your Socks Off Salmon

I love salmon and salmon is my fish of choice for my no meat days of the week; however there is a challenge to find new recipes to keep my taste buds peaked. This is a new recipe for me that I found on theprocessofhealing.com and it is so delicious. The sweetness of the Agave Nectar and the kosher salt give it the tasty crust that I love and roasting the salmon in the oven keeps the salmon moist.

You will need:
• salmon, skin removed (I used about 3 oz. fillets)
• 2 tsp.Agave Nectar
• 1 tsp coarse salt/Kosher salt,
• 1 tsp pepper
 Preheat your oven to 400 degrees and prepare a baking pan (I line it with foil and spray it with cooking spray to make for easy clean-up).

 Heat a non-stick skillet over Med-High heat (you are just searing the salmon) and spray with cooking spray or olive oil. Meanwhile, remove the skin of the salmon.

 Spread Agave Nectar on the side facing up and season with salt and pepper.

 Once the skillet is hot, place the salmon seasoned side down. Do not touch the salmon for about 2 minutes and this will create a crust.

 Meanwhile, season the side of the salmon facing up the same way as the other side.

 Flip the salmon over once that side has a nice brown crust and cook on the other side for another minute.

 After 1 minute, move the salmon to the prepared baking pan and bake in the preheated oven for 10 minutes (for well-done).

Sit down with your healthy sides and prepare to have"your socks knocked off".Enjoy

    I can't wait to try this recipe. I have written it down. Sounds like some I had while in Washington. DH does not eat fish, but I love it. This will be simple and quick to fix while he grills himself a steak!! Thanks.

Not Today

Today, my old favorite place to get a chocolate shake with extra chocolate syrup was having a ˝ price sale on any of their shakes for the whole day. Not today, I said to myself, I will have a delicious strawberry pineapple smoothie that does not have all of the calories or fat as my old favorite. I really love my smoothie; it is made with Greek yogurt, strawberries, pineapples and almond milk. Yum, Yum. Today, I chose to eat healthier and I love it.

Butternut Squash

I am trying to introduce new vegetables into my eating plan. Today I selected butternut squash that I steamed on top of the stove with cinnamon, it was delicious as a side dish. emoticon
