I love tuna fish with Harissa. Harissa is a Turkish condiment that is awesome! It is a spicey pimento and roasted red pepper paste (a little thicker than pesto) that can be added to a ton of stuff. I like it with tuna (instead of mayo), on scrambled eggs, mixed into a bit of cream cheese as a great spread on whole wheat crackers. The uses are endless. It has a bit of olive oil in it so I account for that. (My favorite brand is Les Moulins Mahjous which I get through Zingermans Mail Order. (by the way: A little goes a long way)
I also like "Mexican Potatos" - microwave a medium size potato. Let the potato cool a bit then scoop out the inside and place it in a bowl with 1/4 cup non-fat cottage cheese, 1/4 cup salsa, a touch of fat free sour cream or nonfat plain yogurt, a small amount of sharp cheddar cheese and some cumin and fresh cilantro. Mix it all up and put it back in the potato and microwave it about 1 minute (enough to heat it through). Top with a little paprika. This is great for breakfast, lunch or dinner. My family loves it. Sometimes I add a vege like broccoli, spinach or string beans or if my husband and son need more protein, they'll add some canned beans or ham to theirs. Left overs are tasty the next day! Enjoy!

    I love tuna too. And with crackers, so the sauce added would be AWESOME to me!
