Hello and what a nice start to a wonderful Thursday. Yesterday as I was running my usual wed. errands of recycling , groceries ,getting gas , etc. and trying not to stop and have fast food , as I did not reach my 1st yr anniversary goal of 70 lbs lost , however I have lost 60 lbs and feel so much healthier and very proud of my success as tomorrow is my 1 yr anniversary here at Spark and I owe it all to you inspiring members that have kept me motivated to keeping a promise to myself to getting in shape and lose this 100 lbs of extra weight , so 60 in a yr is making me healthier and happier!
Ok, on with my story. When I picked my daughter up from her job as a preschool teacher in the inner city of Detroit , which I am so very proud of saying that she is a wonderful daughter as well as a remarkable asset to the school system. Well she is doing a hands on lesson of making fruit and veggie kabobs with her class tomorrow , so she wanted to go to this neighborhood fruit mkt where they advertise a WILD WEDNESDAY sale. We went in and much to our suprise it was the best sale I have ever seen!
This is what we got----
Pineapple 2 lg
Strawberries 8 quarts
Mangos 4 lg
Grapes 3 lbs
Peppers 15 mixed colors
Celery 2 bunches
Carrots 2 bags
Beets 4 lg
Eggplant 2 lg
Broccolli 3 crowns
Leaf lettuce 1 bunch
Tomatoes 4 lg
Lemons 4 lg
Limes 4 lg
All of this produce was only 22.63. What a great WILD WEDNESDAY. I think this is a sign , to have me continue to eat 8 to 10 fruits and veggies daily, I will be stopping at this fruit mkt weekly so I can continue to get healthier on my weight loss journey. Oh , and here's the reciept....

I have been trying to control my portions for the last few days , and have done pretty good for the most part , and have kept to my goal of eating 6 to 8 fruits and veggies as they are pretty filling , however its the carbs I have to keep lower. I am on the borderline of being diabetic and should keep under 50 carbs per meal, , sometimes this is a real challenge . I do so love to bake and have rice and pasta along with the sweet fruits. This afternoon I baked applesauce oatmeal muffins, as they are made with sugar sub they still have around 30 or 35 carbs per muffin. Beans too are so healthy, however high in carbs as well., and I always want more than one cup. Im wondering if more fiber counteracts the amount of carbs you have so they don't turn to sugar in your system. Someone told me recently that when you have 4 grams of fiber you can minus 4 grams of sugar if so does it work with the carbs that turn to sugar. Anyone have an opinion on the concept? Although I still will try to keep my carbs around 50 per meal its just such a challenge at times. Learning to adjust is a full time plan, but well worth it in the long run I guess.

Today I had lunch at Red Lobster , and much to my suprise , I must start measuring my portions again. Its a wonder I have not gained weight over these last couple months! Haven't lost either, thats the problem. Well , I ordered a portion measured lunch consisted of 3 oz of baked fish, a half cup of crabmeat stuffing a cup of fresh green beans and a salad with fat free raspberry vinaigrette. Which was supposed to be under 600 calories, and WAS very tasty! However , I noticed my portions at home have gotten a bit larger than I should have, along with all of the holiday goodies that I have had (in moderation I can say) is the reason I just haven't lost anything recently. So , for dinner I measured my cup of chili as I haven't done so with soups, mac and cheese , potatoes, and so forth.
The point is , we get confident in what we think we know and slip back into our old eating habits so quickly.
For this last month, before my one year anniversary I am going to measure all of my portions of whatever I have to try to reach my goal of 60 lbs.in one year. That may not seem like a lot to some of you .however it is 5 lbs a month average loss and that's good enough for me.

So , I've set this new goal to eat 6 to 8 fruits and veggies daily. I made it a point to have at least 2 per meal and sometimes 3 or 4, well its working out better than the 3 exercise vidios daily, I think cause I'm on my feet all day at work that I just dont have the energy or incentive to workout as often as I should, however I do get my steps in most days, over 10.000 usually.
Well this week I made mac and cheese with butternut squash and roasted onion and carrots , I pureed them with 1% milk till smooth and then blended it into the cheese sauce made with 12 oz. mixed cheddar and smokey swiss. Sounds like a lot of cheese , but only 1 and 1/2 oz. per serving . I get 8 delicious servings from a .lb of elbow macaroni. My family couldn't even tell the veggies were in it and I served it with green beans and more carrots so we got 4 veggie servings in the meal , oh and I did put lil smokies in the dish too! I also enjoy at least 2 or 3 fruits at breakfast and the same at lunch so its quite simple to get the 6 or 8 in daily and very filling too.I always meet or go over my 25 grams of fiber per day and have cut my fat considerably. Well when I weigh in tommorrow I hope this has given me a push in the weight loss goal for the first half of Dec. I'll be content with 1or 2 lbs. lost and then to make it through Christmas will be the real challenge. Another day another decision to eat healthier . By george I think im getting the hang of it! Hi :to all of you fellow Bloggers
I know to some it is really fulfilling to blog daily , weekly or even more for some. I just cant get the hang of it. I feel as if my thoughts are kinda boring or not really worthy of putting in a blog , but when I do I feel more accomplished , and therefore here I am . Well as for the last blog that I was committed to picking a exercise vidio or two daily ,that flopped. Oh well ,I do get several walks in throughout the week but I know that I need to work other areas of my body to get in better shape. Knowing and doing are two different things , so I must try harder to incorperate more workouts in my daily activities. On a good note I did lose 2.5 lbs. for November. I may not reach my goal for the New Year but I will be closer to it, slow and steady may not win the race but it gets me closer to the goal. So I'm not stressing on a time frame as long as im making progress is all that matters.
Well that did feel good to write it out , now let me get up and move for the next half hour and I'll feel even better.
