Time to get tracking my food. So far so good. Trying to get more vegetable based around here. Decided to plan a new salad each week this summer to make sure there is a 'green' choice on all those grilling nights, instead of just baked beans, chips, and a macaroni or potato salad. I will plan ahead!
Last night I made a green salad with almonds, a few croutons, and dried cranberries. For lunch I added a few croutons, tomato and a little cheese with a Vidalia onion dressing.
Bought a kit at Sam's: Garden Vegetable Chopped Salad that I'll mix up tonight. Broccoli, cauliflower, red cabbage, dried cranberries, sunflower seeds, carrots and crumbled bacon with a slaw dressing. Sounds good to me!
Just wish we had more sunny days this month. Rainy and foggy makes me want to head for comfort foods instead of green ones.
