Looks like you were in the mood for some crunch yesterday! That cookie is adorable too. I bet it was the best thing that you ate since it obviously was made with love! I've had the butternut squash lean cuisine before and enjoyed it.

Hope you're having a good day today too!

I have been going for a few weeks now and I enjoy it. Nice people, and hopefully now instead of losing the same 5-10 pounds over and over again I will actually drop them consecutively!

Hope you're having a good day!

Food Picture Tracking - Oct. 19

I'm posting my blog early because I have to take the kids to scouts and I have sign language choir rehearsal as well. So... here are the goods:

Today was a church fasting day until dinnertime so don't be alarmed by the one meal. It's not an every day occurrence.

DINNER (4:00 p.m.) -- Started dinner a little early, eh? LOL

Grilled chicken breast; collard greens; purple potatoes (YES, purple potatoes!)

I remembered seeing purple potatoes on a segment of the Today Show where the nutritionist was talking about the benefits of eating from the rainbow. But, I had never seen them in a grocery store until recently. So, I picked up a few and today was my first attempt to cook them. I spread them with garlic, rosemary, olive oil, salt and pepper and roasted them in the oven at 400 degrees. I think it was 20-30 minutes.

They were good. Try them if you can find them. You'll probably like them!

Love purple potatoes! Very high in antioxidants! Have you ever tried purple cauliflower?

The collards look so delicious. My crew doesn't eat them so I rarely cook them. It is about time to cook a batch or maybe some mustard greens.

I know what you mean about having someone else on here with pictures from their day. It's so fun to look at your daily pictures! Your meal today looks amazing by the way - especially since you described how you made your potatoes.

Technically I only lost 1.75 pounds, but I'm rounding up to 2 and trying again this week. The walnuts in the pasta was a bit of a stretch, but it worked. It was actually tasty. Although, I would say maybe next time instead of marinara sauce I would use maybe a tsp or 2 of extra virgin olive oil, maybe some feta cheese, and some vegetable. I didn't have that stuff in the house though, so I had to make do with what I did have.

What is sign language choir rehearsal?

BREAKFAST (9:15 a.m.)

2 pieces of Oscar Mayer turkey bacon; 2 scrambled eggs, 12 oz. 1% milk

LUNCH (12:20 p.m.)

I had intended to purchase lunch today, and this Fiber One bar was just one of the snacks that I packed for myself. But, come lunch time, I wasn't really that hungry, so I decided that this bar would suffice for lunch.

SNACK (2:40 p.m.)

1 serving = 24 crackers. That's how many I ate.

DINNER (5:30 p.m.)

Picture didn't come out too great; but this dinner was delicious... Blackened salmon cooked to perfection (in my opinion) and baked potato with the fresh tomato salsa I made yesterday on top.... Yum Yum Yum!!

BTW, TOM's twin is visiting me this week. Ain't that something.

Hey, thanks for checking out my blog again. I am really enjoying taking these pictures and think that's why I lost this week. Your salmon, baked potato with salsa on top looks amazing. I know I would love that dish.

I've had salsa on my eggs before, and I'm not crazy about it. haha. I know a lot of people get grossed out by ketchup on eggs, but I like it. The ketchup I chose was all natural with no high fructose corn syrup so it met my guidelines for what is good and ok.

MICHSTATE: Thanks for the comment on my Food Picture Tracking Blog for Oct. 18th. Your points are valid. But, let me just say, I'm probably a volume eater too. If you go through my blogs for this entire month, you'll see that I'm definitely not starving. But, Oct. 18th was ONE day in the life... It's different every day. (And I don't always take the time to explain why I ate the way I ate, I just put up the picture.)

This week is very "different" because it's TOM week. I'm following some advice from some other Sparkers by just giving my body what it wants. I started off ravenous (or rather, with lots of cravings), but it's kind of tapering off now and I'm not as hungry. I'll be back to normal soon. "Normal" is shown in my previous blogs. If you go back and look over my blogs from prior to the 14th, you'll see loads of freggies!! I include them with breakfast, lunch, snacks and dinner. They are all over the place!! :-) But, again, for this particular day, I didn't need to bulk it up with anything. I wasn't that hungry.

But, last I checked, potatoes and tomatoes are freggies... not green leafy, but they are veggies and fruit, nonetheless. :-) I don't often have a starchy veggie, so that was a big treat for me. I brought a few potatoes, so they will be consumed. LOL

Thanks again!

You can ignore me if you didn't want constructive criticism, but I am wondering where the fruits and veggies are??
This may be a personal preference, but I am a volume eater, and couldn't survive on such little volume of food, I would add some freggies to bulk it up some!!!:-)
