The Great Cookie Experiment of 2013

Ah, itís the holiday season. Time to once again face my demons.

Sugar-filled, chocolatey demons.

I actually was looking forward to todayís holiday cookie baking, as for one thing I was NOT HUNGRY. Thanksgiving kind of carried over into Black Friday and Saturday for me, so I figured I would make it through cookie baking unscathed. Once said cookies were baked, I gave them to my husband to put in our locked basement fridge to have him ration out to me for gift giving purposes only.

Also, todayís cookie-baking allowed me to do three things:

- Use up the rest of my wheat flour to make regular chocolate chip cookies
- Experiment with other flours (and they did not disappoint!)
- Come back to my blog. Itís been far too long.

First recipe was nothing too exciting Ė just standard Nestle Toll House Cookies using wheat flour. It's officially gone - I will never buy wheat flour again.

Second recipe: Made Nestle Toll House Mint Chocolate Delights following the recipe provided on the back of the bag:


Ė only I substituted chickpea flour in place of regular flour. The minty-ness of the cookie actually works well to mask the chickpea flavor.

Third recipe: Followed the Wheat Belly Chocolate Chip Cookie RecipeÖ


...only I had a minor mishap within the first few minutes of popping them into the oven. A light smoke was emanating from the oven door. My mistake? Using wax paper instead of parchment paper for the baking sheet liner.

I think by batch #3 of cookies, I just stopped paying attention.

I salvaged what I could of the slightly baked-dough and remixed it with the non-baked dough (hopefully thatís okÖ I ate a cookie and havenít died yet, so thumbs up there).

The cookies look dark, but taste pretty dang good.

Hopefully my friends and colleagues can get past the look of the cookie and appreciate the unique yummy-ness of a gluten free chocolate chip cookie!

Going back to the office after vacation - not something one generally looks forward to, right? But for some reason, I was truly excited to see my colleagues and jump head first into the projects at hand.

Weird, I know. I was feeling great about a lot of things - the opportunity to focus more on what I'm eating, less on how much I'm running. Doing good work in the community by helping to control the feral cat population (although any free time I have for writing has been spent updating our website and blog about these cats... but I enjoy it). And don't forget the upcoming holidays! Lots to be energized about.

I won't say that I've been a model of nutrition since I got back from Florida, but I am certainly doing better than before I left. And I've picked up a new book to read - The Shift: How I Finally Lost Weight and Discovered a Happier Life
- a recommendation from a friend that finally came in at the library.

Hoping to get through a week of eating rationally before setting down to Thanksgiving dinner. We'll be going to my father's house - which is usually a challenge eating-wise for me.


My plan is to bring at least one wheat free side dish and dessert so that I can feel good about what I'm eating next week.

    I, obviously, am not you, and you will almost definitely not be able to do what I would do in your shoes, but at this year's dinner I would ASK on purpose for a really BIG piece of that lasagna and then proceed to never eat it ALL NIGHT LONG. But I wouldn't let anyone take it away from me either, oh no!!! "I'm SAVING it for later!" It would almost certainly cause a ruckus (which is why I'm sure you wouldn't do it) but I would revel in the dismay!! Yes, I AM eccentric.

I Am Disappoint

Certainly, nobody that matters would be disappointed in my Disney Wine and Dine half-marathon performance last weekend. But hereís the skinny (or not-so-skinny, after the race was followed by five days of vacation binging):

- 8 minutes slower than the last half marathon I did (Philadelphia Rock and Roll half marathon, September 2012)
- A little under 10 minutes slower than time PR of 2:00:54 (April, 2012)
- 15 minutes slower than my goal time

Disappointed, yes. Surprised? No. Running has been a struggle for me all year Ė Iím all out of whack since I am so inconsistent nutritionally. I think part of the problem was that there wasnít a time in 2013 that I WASNíT training for a half-marathon, which is a lot of pressure. Iím kind of relieved that itís over and I can work at my own pace.

If you are going to run 13.1, Disney is the place to do it. Disney has me convinced I may even be able to do a full marathon some day.

Disney was supposed to be my last half-marathon butÖ it wonít be. Not with my 1:55:00 goal still out there. But itís time for me to put more effort into healthy eating, which means maybe a smidge less time at the gym. This might also free up some more time to get back in to blogging Ė between training, saving feral cats, and my day job, Iíve been neglecting Wheat on Trial. I think Wheat is going to win the appeal, or the whole case is going to be thrown out due to mistrial.

Cat Update

Our cat project continues! After catching yet another feral cat this morning - and realizing we're out of cages, and Planned Pethood (our low cost spay/neuter clinic) isn't open until Monday... we figured we'd need some help.

    Thanks for the link. What a worthy cause. We live in the country and constantly have people dropping their cats off at our house or the farmers surrounding us have a multitude of cats. With 3 furkitties in the house, we can't take on anymore. There are zero vets in my area that would offer a discount on a feral cat. So very frustrating, I wish people would just spay/neuter their pets!
