I have just swapped to a low carb diet which I am REALLY enjoying and tofu seems to be something people suggest a lot.

I WILL cook something with it this week - you have inspired me emoticon

Fried Oysters w/ tartar sauce (Low Cal)

Saturday, January 04, 2014

I had a craving last night for fried oysters with tartar sauce. So my challenge was to try and make it as low cal as possible.

1. TARTAR SAUCE: (reg has 160 calories- mine has 60 cals) next time I will add some finely chopped pickles to this:

2 BREADING: this fish fry seasoning was way too salty. Next time I will use just a tad with a little flour (no milk or egg wash)

3 OIL: I used Zero calorie butter spray to fry them. I wasn't sure if this would work or not, but it work great!

4 One medium oyster has approx. 40 calories ( plus a few more cals for the breading) I ate 5 of them. Very filling!

I love oysters. You made me hungry for some. I got a jar at Costco around Thanksgiving, made stew, ate raw, poached them with eggs and spinach, fried a few (I used crushed saltines). You just made me hungry for more.

I recently started baking mine and they are delicious I just lightly dust them in Italian bread crumbs and bake 20-25 minutes...One of my best friends husband is an oyster slayer (that's the funny name for him after 30 yrs) they live in Naselle Washington and he is the supplier for the cannery..We went to the beach over xmas and he gave us 1/2 gallon for xmas emoticon the next day we got home and I breaded & froze them and then I just bake them frozen when wanted...You can never go wrong with oysters emoticon

Looks wonderful, great ideas for reducing the calories!!

FYI: The FDA labeling law says that if there’s 5 calories or less in a serving, a food can be labeled calorie free.
In I Can't Believe It's Not Butter! Spray, after the 1st. ingredient water the next 3 are Soybean Oil, Salt, & Sweet Cream Buttermilk.
1/4 of a spray is a serving, so one full spray is probably 20 calories.
These are what many refer to as 'hidden calories'. It's basically label trickery :-(
One spray bottle of that I'm guesstimating would be something like 1800 to 2400 calories...

Pumpkin Oatmeal (baked)

Friday, December 06, 2013

I made this yesterday and it was so delicious! It's not very sweet (I like sweet!) so I used a little bit of sugar free maple syrup on top.

I love oatmeal but pumpkin is not usually my favorite. I have added a can of pumpkin to a box of angel food cake and really love it! I will have to try this. Thanks.

Coleslaw

Coleslaw- yum!

So easy to make it low cal and it has all the same flavor as the regular stuff.

The last 2 batches I added the "secret" ingredient. Picture says it all...

My Siracha Chili Sauce comes in a squirt type bottle, I've not seen it in a jar, is it the same as the original?
I'm freakin addicted to the stuff...lol

    OHH YUM!
I love Rooster Siracha Chili Sauce & Coleslaw but never had together.
Thanks for the tip.

Spicy is better because seems to fill me up.
Hopefully not with SALT.
I add Rooster to crackers, popcorn, ranch salad dressing, plain rice..umm

Happy Friday!

Spinach, Tofu, Mushrooms...and Spam? LOL

Friday, October 04, 2013

Mike requested Spam and fried potatoes for dinner last night- LOL. I've never cooked Spam in my life, nor do I really know how to fry potatoes, but I pulled it off- he ate it all!

I'm on a spinach/tofu/mushroom kick right now, so that's what I had. I feel so fortunate to get all this free tofu! Mike's bro works at the tofu factory. Three cases of it this year!!
